Depois da minha viagem culinária a Lima no Peru (leia AQUI), prometi-lhe algumas receitas! Aqui está o primeiro, que é perfeito para os belos dias que se avizinham. Este fermento (ou prato) é servido frio. Inspirei-me livremente nas causas que pude provar no local, respeitando, claro, as tradições. O resultado é simples, belo e delicioso, mas acima de tudo muito original. Uma receita que farei muito frequentemente em casa.
Receita para 4 pessoas:
-2 grandes batatas bintje (no Peru utilizam batatas amarelas) -4 colheres de chá de creme de aji amarillo -3-4 colheres de sopa de azeite de oliva -1 “aji amarillo” (ver abaixo como o substituir) 2 peitos de frango grandes (ou atum enlatado) fritos e arrefecidos -2 colheres de sopa grandes de maionese -1 talo de aipo -1/2 chalotas, finamente cortadas -o sumo de meia lima -1 ou 2 abacates maduros -sal, pimenta
Cozinhem as vossas batatas a vapor. Deixe-os arrefecer, depois descasque-os. No Peru, tomam “papas amarillas”, quase impossível de encontrar aqui. Bintje é uma boa escolha. Fiz a receita com cerca de 650g de carne cozinhada e descascada.
Mash as batatas.
Este é o creme de “aji amarillo”. É uma pimenta laranja com pouco calor. Pode passar sem ela na receita, mas também pode encontrá-la AQUI ! É a loja “el INTI” em Paris. Eles têm uma loja na Internet. Este é o famoso creme de chili (ver abaixo como o substituir).
Mash as batatas com o creme de aji amarillo, azeite e sal.
Não hesite em ir lá com um espremedor de batatas.
Este é o famoso “aji amarillo”. Vendem-no congelado na loja peruana (http://www.boutique-peruvienne.com/fr/). MAS! Eu provei-o cru e pode realmente prová-lo com uma pimenta laranja e um pouco de tabasco. Deixe-me explicar: esta pimenta não é muito forte. Acrescenta sabor e cor. O sabor é muito semelhante ao de uma pimenta (embora haja uma ligeira diferença). A carne é apenas mais fina e pica um pouco. Assim, um pouco de pimenta laranja (não uma inteira) e algumas gotas de tabasco farão o truque. Não deixe que isto o impeça de fazer a receita! Como o creme “aji”, pode misturar (sem as sementes) o resto da pimenta laranja com uma colher de chá de óleo, um pouco de sal e tabasco e voilà!
Em qualquer caso, cortar o aji ao meio e remover as sementes. Para lhe dar uma ideia do tamanho desta malagueta, esta tinha cerca de 8-9cm. Portanto, um pequeno quarto de uma pimenta laranja.
Cortar em fatias finas.
Depois cortar em cubos pequenos.
Salte para o puré!
Sabor para ajustar o tempero.
Coloque o seu frango cozinhado e arrefecido no liquidificador.
Em vez disso, pode utilizar atum enlatado. Verter a carne para uma tigela e adicionar a maionese.
Cortar finamente alguns pedaços de aipo (a gosto).
Acrescentar meia chalota (ou, claro, um pouco de cebola!). Acrescentar sumo de lima, sal e pimenta.
Colocar uma camada de puré de batata em círculos de 8cm (ou mais!) de espuma alta.
Cortar o abacate em fatias e colocar uma camada em cima.
Adicionar novamente o puré de batata, seguido do frango (ou atum).
Acabar com uma camada de puré de batata. Fazer o mesmo para os outros 3 círculos. Pode servir estas causas com salada verde, tomate, azeitonas pretas, etc. Um deleite quando o tempo está bom. Servir refrigerado, talvez com a ajuda de um empurrador.
Pode sobrar algum puré de batata e frango. Para ser devorado em qualquer caso! Se não tiver um círculo, pode, claro, servir tudo em conjunto sem se preocupar necessariamente com a estética…
