Um risoto cremoso com sabores totalmente inesperados! Isto é o que sugiro com a adição de pasta de caril vermelho e camarão com folhas de kaffir. Um cruzamento entre a cozinha clássica italiana e os sabores tailandeses. O resultado é explosivo e particularmente saboroso. O risoto derrete na sua boca, a malagueta sabe deliciosamente, os camarões são caramelizados na superfície e tudo isto acrescentará um toque de originalidade ao seu jantar!
É este o aspecto de uma “folha de kaffir”, também chamada “folha de limão” ou “folha de combava”. É frequentemente vendido congelado em mercearias asiáticas.
Receita de risoto de caril vermelho para 4 pessoas:
-1 chalota -3 colheres de sopa de óleo -2-3 colheres de chá de pasta de caril vermelho (para uma pasta caseira clique aqui) -300g de arroz risotto -1 litro de caldo de vegetais -6 folhas de kaffir -4 cachos de coentros -2 colheres de chá amontoadas de açúcar mascavado -2 colheres de sopa de nuoc mâm -15cl de creme de coco
Para camarão: -40 camarões descascados -2 colheres de chá amontoadas de pasta de caril vermelho -6 folhas de kaffir -2 colheres de chá amontoadas de açúcar mascavado -2 colheres de sopa de nuoc mâm -oil para os dourar
Para o risoto: colocar a chalota finamente picada, óleo e pasta de caril vermelho numa panela grande em lume moderado.
Fritar durante um ou dois minutos e depois adicionar o arroz.
Misturar bem na gordura de modo a que esta se torne perolada. Depois deitar um pouco de caldo de vegetais (sobre o litro).
Depois proceder como para um risoto clássico: verter no stock em pequenas quantidades. Esperar até que seja bem absorvido antes de deitar mais. No total, um risoto demora cerca de 20 minutos a cozinhar a partir do momento em que se derrama no caldo.
Isto dá-lhe tempo para preparar o camarão: retire o presunto médio das folhas de kaffir.
Em seguida, cortá-los finamente.
Preparar os camarões colocando-os com todos os seus ingredientes numa tigela (açúcar, pasta de caril vermelho, nuoc mâm, 6 folhas de kaffir). Misturar bem.
Colocar 6 folhas picadas de lima kaffir no risoto.
Quando tiver deitado todo o caldo, adicionar o creme de coco, o açúcar e o nuoc mâm.
Cortar finamente os coentros e adicioná-los. Na foto, eu tinha coentros planos, mas os coentros clássicos servem obviamente!
Misturar bem. O risoto está pronto! Mantenha-o quente!
Verter óleo para uma frigideira grande em lume bastante alto e adicionar o camarão. Se não couber tudo na panela, cozinhe em dois lotes!
Com o açúcar, o camarão irá colorir bem.
Verta o risoto em 4 pratos, adicione 10 camarões cozidos e sirva imediatamente!
