Depois de publicar várias receitas de caril no meu blog de culinária (caril vermelho, caril verde, caril amarelo, o caril massaman) onde apresentei os métodos para fazer massas “caseiras”, que podem ser bastante enfadonhas mas no entanto infinitamente deliciosas, apresento-vos um caril panang com uma pasta pronta a fazer para um resultado de bluff de sabores e especialmente muito mais rápido de preparar. Acabo de regressar de Banguecoque onde pude provar este caril panang com carne de porco, líchias e amendoins e não pude esperar: assim que voltei comecei! Aqui está a minha versão, que foi rapidamente comida por todos os meus convidados. Este caril é uma viagem em si mesmo. A Tailândia convida-se a entrar na panela, especialmente com um bom arroz caseiro pegajoso! Um caril que farei repetidamente…
Receita de caril panang com carne de porco e lichia para 6 a 8 pessoas:
-900g de lombo de porco desossado -2 colheres de sopa de óleo -75g a 100g de pasta de caril panang (dependendo da força da malagueta que se quer) -1,5 litros de leite de coco para cozinhar -1 colher de sopa de molho de peixe -2 colheres de chá de açúcar de palma ou açúcar de vergeoise -500g de líchias descascadas e sem caroço, frescas ou em lata -200ml de sumo de lichia (o que está na caixa é perfeito) -7-8 folhas de kaffir (ou mais) -100g de amendoins assados sem sal -uma dúzia de folhas de coentros planas (maiores, mas os coentros clássicos servem perfeitamente)
Esta é a pasta de caril panang. Esta pasta, que pode ser encontrada na Tang’s ou nas mercearias asiáticas, é muito boa, especialmente se tiver um desejo de caril…! Junto a ele está o lombo de porco.
Colocar o óleo num grande pote sobre um calor bastante elevado. Acrescentar a pasta de caril. Pode ir com calma e adicioná-lo mais tarde se tiver medo que o caril seja demasiado forte.
Mexer para que os caril wafts fiquem um pouco no óleo quente.
Acrescentar o leite de coco especial para cozinhar.
Aquecer e levar o leite à ebulição. Entretanto, cortar o lombo de porco em pequenos pedaços.
Adicioná-los ao leite de coco a ferver.
Cortar as folhas de lima kaffir em fatias finas.
Coloque-os no caril.
Lavar os coentros e cortá-los em pedaços.
Acrescentar as folhas e também o molho de peixe. Depende de si, tem de provar o caril. Quando o molho de peixe é adicionado, o caril adquire um cheiro algo especial. Mas não se preocupe, tudo voltará ao normal depois!
Não se esqueça do açúcar. Deitar o sumo de lichia nesta altura. Após a primeira cozedura, adicionar as líchias para evitar que se estraguem.
Deixar o caril a cozinhar em lume brando durante uma boa hora. A carne vai amaciar bem e os sabores vão desenvolver-se.
Em seguida, cortar os amendoins grosseiramente num liquidificador.
Não deve ser um pó demasiado fino.
Vão para o caril!
Finalmente, acrescentar as líchias.
Ferva em lume brando durante mais 20 minutos. É tempo de provar para ajustar os elementos: mais ou menos açúcar, pasta de caril, sumo de lichia, folhas de limão…
Voltar a cortar finamente folhas de lima kaffir para pôr em cima do caril antes de servir quente com arroz glutinoso. Finamente picadas, as folhas de kaffir podem ser comidas sem preocupação!
