Continuamos com as grossas quiches! Hoje em dia é um delicioso brócolo, presunto e quiche Roquefort. Claro que se pode variar, mas esta composição funciona muito bem. Claro que tem de gostar do Roquefort, mas pode trocá-lo por um queijo mais macio como o Gorgonzola. Esta quiche será muito melhor quente ou quente, porque fria, perderá o sabor dos brócolos, a favor do queijo. Por isso, saiam dos vossos aros para fazer grandes e belas quiches!
Receita para uma quiche grande (!!) com brócolos, presunto e queijo Roquefort:
uma massa folhada (a receita caseira AQUI) -2 cabeças de brócolos -1/2 nó de presunto -1 fatia (ou 1+1/2) de Roquefort ou de queijo Bleu d’Auvergne -6 ovos -600g de creme completo -sal, pimenta, noz-moscada
Cozinhar os brócolos a vapor durante 12 minutos.
Assim que são cozinhados, cortá-los em pedaços grosseiros.
Preparar a enxaqueca, misturando os ovos e as natas.
Cortar o nó de presunto em pequenos pedaços. É claro que podem ser usadas fatias grossas de presunto.
Cortar o queijo em pedaços.
Acrescentar o presunto e o queijo ao creme.
Depois os brócolos (mesmo que ainda estejam quentes).
Tempere com sal e pimenta e adicione noz-moscada ralada fresca.
Fechar no círculo de 24cm de diâmetro e 4,5cm de altura, escurecido com pastelaria (forrado com pastelaria).
Cozer a 190-200°C durante 50 minutos, ou até o centro estar quase completamente livre de tremuras.
