Depois de partilhar convosco a minha receita de thanzong buns (receita AQUI), quis adaptá-la para um bolo de manhã ou de tarde, com muitos frutos secos e chocolate para uma atmosfera perfeitamente outonal! As proporções não são portanto as mesmas e isto dar-lhe-á um brioche muito suave, não demasiado doce ou demasiado amanteigado. Será perfeito para se confortar em casa!
Thangzong:
15g de farinha
80g de leite
Colar :
110g de leite
7g de levedura de panificação desidratada (ou 15g fresca)
30g de açúcar
1 ovo grande
235g de farinha
90g de manteiga semi-salgada
100g de nozes
100g de pedaços de chocolate preto ou de leite
Comece por preparar o thangzong. Colocar a farinha numa pequena caçarola, depois deitar o leite gradualmente enquanto se bate para evitar grumos.
Calor em lume brando. A mistura irá engrossar. Quando atingir 65°C, desligue o calor e deixe-o arrefecer durante alguns minutos.
Coloque todos os ingredientes, incluindo o thanagzong, na tigela do seu processador de alimentos, excepto a manteiga, os frutos secos e o chocolate.
Amassar durante 10 minutos com o gancho da massa.
Acrescentar a manteiga em pedaços.
Amassar novamente até que a massa esteja lisa.
Deixar subir no forno a 40°C durante 1 hora e meia, ou à temperatura ambiente até a massa duplicar de volume.
Derreter a massa, colocar um pedaço de película aderente à sua volta e arrefecer durante a noite.
No dia seguinte, a massa terá subido. Desgastá-lo novamente e espalhá-lo sobre uma superfície de trabalho levemente enfarinhada.
Verter os pedaços de chocolate e os pedaços de nozes para o centro.
Dobrar o topo da massa em direcção ao centro, depois a base e finalmente os lados.
Estender a massa com um rolo de massa. As nozes e o chocolate irão determinar a espessura da massa. Dobre a massa em terços numa direcção e depois em terços na outra, como uma massa folhada, embora não seja este o caso aqui. Finalmente, estender a massa para um quadrado de cerca de 30cm.
Dobrar os cantos em direcção ao centro.
Depois os novos recantos obtidos novamente em direcção ao centro.
Virar a massa para fazer uma bela bola.
Deixá-lo crescer novamente durante 1h30-45 minutos à temperatura ambiente. Deve abanar ligeiramente.
Cozer durante 35-40 minutos a 160°C num forno ventilador.
Deixar arrefecer antes de comer. Mantenha-o numa linha limpa para o manter húmido!
Commencez par préparer le thangzong. Mettez la farine dans une petite casserole, puis versez le lait progressivement tout en fouettant pour éviter les grumeaux.
Mettez à chauffer sur feu doux. Le mélange va épaissir. Quand le tout arrive à 65°C, arrêtez le feu et laissez tiédir quelques minutes.
Dans la cuve de votre robot, mettez tous les ingrédients dont le thanagzong, sauf le beurre, les noix et le chocolat.
Pétrissez pendant 10 minutes avec le crochet pétrisseur.
Ajoutez le beurre en morceaux.
Pétrissez de nouveau jusqu’à ce que la pâte soit bien lisse.
Laissez gonfler en étuve à 40°C pendant 1h30, ou à température ambiante jusqu’à ce que la pâte double de volume.
Faites dégazer la pâte, placez un film étirable au contact, puis mettez au frais un nuit.
Le lendemain la pâte aura gonflé. Dégazez-la à nouveau puis étalez-la sur un plan de travail légèrement fariné.
Versez au centre les pépites de chocolat et les noix en morceaux.
Rabattez le haut de la pâte vers le centre, puis le bas et enfin les côtés.
Étalez la pâte au rouleau. Les noix et le chocolat vont décider de l’épaisseur de la pâte. Pliez la pâte en trois dans un sens puis en trois dans l’autre, à la manière d’un feuilletage même si ici ce n’est pas le cas. Étalez enfin la pâte en un carré d’environ 30cm de côté.
Rabattez les coins vers le centre.
Puis les nouveaux coins obtenus à nouveau vers le centre.
Retournez la pâte pour en faire une belle boule.
Laissez-la à nouveau pousser 1h30-45 à température ambiante. Elle doit trembloter légèrement. Faites cuire 35-40 minutes à 160°C sur chaleur tournante.
Laissez tiédir avant de dévorer. Conservez-la dans un ligne propre pour garder son humidité !
