Uma receita muito simples que o fará viajar! Os “kesras” ou “bolos argelinos” são feitos de sêmola, óleo, sal e água e isso é tudo. Eles são como o pão que se come diariamente na Argélia com a sopa. As variações podem ser encontradas com levedura, mas aqui tudo é fácil e pode ser feito em casa com uma simples panela. Mais uma vez obrigado a Fariza de “Délice de la Casbah” por me ensinar pacientemente a enrolar a massa e por me transmitir, por um lado, a sua paixão e, por outro, esta receita simples, deliciosa e, acima de tudo, tradicional, tudo o que adoro!
Nesta receita, a sêmola média é utilizada para fazer os “kesras”. Estas não são sementes de cuscuz (que em França são chamadas “semolina cuscuz”) mas sim sêmola média de trigo. Pode ser facilmente encontrado em mercearias ou em algumas lojas “orgânicas”.
Receita para a kesra:
-1kg de sêmola média
-250ml de óleo
-500-600 ml de água
-1 colher de chá amontoada de sal
Colocar a sêmola média, sal e óleo num processador de alimentos tipo “kitchenaid” ou “kenwood” com o gancho da massa.
Adicionar 500ml de água de uma só vez e deixar o processador a funcionar. Se necessário, adicionar um pouco de água para obter uma consistência macia da massa. Deixe-o correr durante pelo menos 5 a 10 minutos!
Faça bolas de massa (com as quantidades na receita, pode fazer 2!!) um pouco maior do que um punho fechado.
Aplainar cada bola à mão.
Depois alisar com um rolo de papel para fazer um belo bolo redondo.
Picada com um garfo.
Colocar numa frigideira anti-aderente em lume relativamente alto. Pode até usar o crepador “krampouz” se tiver um (não me arrependo mesmo da minha compra!!) ver as minhas panquecas) ou um plancha muito quente. Cozinhar durante pelo menos 5 minutos de cada lado. Claro, apenas uma kesra pode ser colocada numa frigideira de cada vez!
Virar a kesra para verificar a dádiva. Deve ser bem dourado e cozinhado de ambos os lados.
