Partilho convosco uma receita do meu livro “Je fais mon chocolat maison” publicado pela Solar e prefaciado por Christophe Michalak! Fiquei muito inspirado pelos biscoitos que se podem encontrar em Nova Iorque, numa pastelaria muito famosa. Já tinha decifrado a receita “simples” no meu blog, mas desta vez ofereço-vos a versão 100% chocolate. Com um toque de sal e baunilha, estes biscoitos são completamente viciantes e se os começar a fazer, tenha cuidado, pois ser-lhe-á pedido que os faça a toda a hora! Faço-os tal como ali, na versão XXL.
110g de manteiga semi-salgada
75g de 55% de chocolate preto
100g de açúcar
125g de vergeoise castanha
1 colher de chá de baunilha líquida
1 boa pitada de sal
50g de ovo
240g de farinha
20g de cacau em pó não adoçado
200g de 65% de pedaços de chocolate
Derreter a manteiga e o chocolate no microondas. Misturar o açúcar, vergeoise, baunilha líquida e sal na tigela de uma batedeira. Verter o chocolate/manteiga derretida e misturar novamente. Acrescentar o ovo. Misturar e depois deitar a farinha e o cacau em pó não adoçado. Misturar por mais um minuto para obter uma pasta homogénea. Verter as lascas de chocolate e misturar. A massa está pronta. Não há fermento, isto é por desenho.
Dividir a massa em 5 bolas. Isto torna os biscoitos monstruosos, totalmente decadentes, pesando cerca de 180g cada.
Pegue numa bola e rasgue-a à mão para lhe dar uma aparência muito áspera. Ter uma bola de massa altamente texturada aumenta a área de superfície da crosta. Colocar cada biscoito gigante sobre uma assadeira e congelar durante pelo menos 4 horas ou durante a noite.
Pré-aqueça o seu forno a 200°C (é este calor elevado no forno que vai procurar bem a crosta exterior antes mesmo de cozinhar o interior). Colocar os biscoitos congelados no forno durante 15 a 20 minutos. Deixe-os arrefecer na assadeira durante cerca de dez minutos antes de os transferir cuidadosamente para uma assadeira. Os biscoitos gigantes estarão no seu melhor meia hora após a cozedura: o interior terá tido tempo de endurecer ligeiramente, o chocolate ainda estará meio derretido e a crosta estará estaladiça até à perfeição.

Je partage avec vous une recette de mon livre "Je fais mon chocolat maison" édité chez Solar et préfacé par Christophe Michalak ! Je me suis très largement inspiré des cookies que l’on trouve à New York, dans une pâtisserie très connue. J’avais déjà craqué la recette « nature » qui se trouve dans mon blog, mais cette fois je vous propose la version 100% chocolatée. Avec une touche de sel et de vanille, ces cookies sont complètement addictifs et si vous commencez à en faire, prenez garde, car on vous en demandera d’en faire tout le temps ! Je les fais comme là-bas, en version XXL.
Faites fondre le beurre et le chocolat au four à micro-ondes.Mélangez dans la cuve d’un batteur, le sucre, la vergeoise, la vanille liquide et le sel. Versez alors les chocolat/beurre fondus puis mélangez de nouveau. Ajoutez l’œuf. Mélangez puis versez la farine et le cacao non sucré en poudre. Mélangez pendant encore une minute pour avoir une pâte homogène. Versez les pépites de chocolat et mélangez. La pâte est prête. Il n’y a pas de levure, cela est voulu de ma part.
Divisez la pâte en 5 boules. Cela donne des cookies monstrueux et totalement décadents d’environ 180g chacun.
Prenez une boule et déchirez-la à la main pour lui donner une apparence très brute. Le fait d’avoir une boule de pâte très texturée augmente la surface de la croûte. Posez chaque cookie géant sur une plaque et mettez au congélateur pendant au moins 4 heures ou toute une nuit.
Préchauffez votre four à 200 °C (c’est cette forte chaleur du four qui va bien saisir la croûte extérieure avant même de cuire l’intérieur). Mettez les cookies congelés au four pour 15 à 20 minutes. Laissez-les ensuite tiédir sur la plaque pendant une dizaine de minutes avant de les transposer délicatement sur une grille à pâtisserie. Les cookies géants seront à leur paroxysme une demi-heure après leur cuisson : l’intérieur aura eu le temps de se raffermir légèrement, le chocolat sera encore à moitié fondu et la croûte sera craquante à souhait.
