Préparez les hauts de de cuisses. Enlevez la peau, puis débarrassez-vous de l'os central et de tous les cartilages. Coupez ensuite chaque haut de cuisse en 8 où 10 morceaux.
Chauffez de l'huile de tournesol et l'huile de sésame grillé dans une pole ou un wok. Ajoutez l'ail et le gingembre râpés.
Quand ils commencent à se colorer, ajoutez les morceaux de poulet. Laissez cuire de tous les côtés en remuant constamment.
Ajoutez ensuite la sauce de soja, le miel et le confit de pamplemousse. Laissez caraméliser puis ajoutez les zestes d'orange et citron vert et la coriandre fraîchement hachée.
Servez brûlant avec du riz nature en saupoudrant de graines de sésame.
