Empieza la temporada de vieiras y como soy una fanática, os propongo esta receta que me encanta. Sobre un lecho de boniatos asados, los puerros cremosos se coronan con vieiras cocinadas en mantequilla de avellanas, todo ello servido con una beurre blanc de naranja. Llevo haciendo beurre blanc desde que tenía 7 años. Lo hicimos juntos, mi madre y yo. Y desde hace algunos años mantenemos las chalotas en la salsa final. Solemos quitarlos, pero creemos que es una pena cuando son tan buenos en sabor y textura. Con un toque de piel de naranja, este plato es una auténtica delicia.
Receta para 4 personas:
2 batatas
4 cucharadas de aceite de oliva
1kg de puerros
20 cl de nata líquida
2 chalotas
150 ml de vino blanco seco
125 g de mantequilla salada
1 naranja sin tratar
1 cucharada de nata líquida
12 hermosas vieiras
mantequilla semi-salada para cocinar las conchas
sal pimienta
Pelar los boniatos.
Córtelas en rodajas de 3 mm de grosor.
Colócalos sobre papel de horno en una bandeja de horno. Unte ambos lados de las rebanadas con aceite de oliva.
Cocer en el horno precalentado a 190°C durante 25 a 30 minutos hasta que las patatas estén bien coloreadas.
Preparar los puerros.
Quitar algo de lo verde y las raíces. Asegúrese de que no haya tierra en la zona verde restante. Cortar por la mitad a lo largo y en rodajas finas.
Poner todo en la sartén con el aceite de oliva.
Dejar cocer unos 20 minutos a fuego moderado, removiendo de vez en cuando. Añadir la nata líquida y mezclar. Dejar cocer a fuego lento durante 5 minutos.
Pon sal y pimienta a tu gusto.
Para la salsa, pelar y picar finamente las chalotas.
Colóquelos en una cacerola pequeña.
Vierta los 150 ml de vino blanco seco.
Añadir la pimienta y hervir hasta que el líquido casi se haya agotado. Sólo un pequeño antecedente. Esto lleva unos 15 minutos.
Añadir la mantequilla salada en 4 o 5 pasos a fuego lento. La primera pieza debe fundirse bien antes de añadir la siguiente. Aquí mantengo las chalotas, creo que es una pena quitarlas como en muchas beurre blanc.
Remover constantemente a fuego lento. La mantequilla mantiene su textura cremosa y no se corta.
Cuando se haya añadido toda la mantequilla, vierta una cucharada de nata líquida para impedir que la salsa se corte.
Añada también la ralladura de media naranja sin tratar.
Una última mezcla y ya está.
Para las vieiras, vierta un buen trozo de mantequilla semisalada en una sartén a fuego alto.
Cuando la mantequilla se convierta en una nuez, añada las cáscaras. Untarlas con la mantequilla de la sartén con una cuchara.
Dales la vuelta para cogerlos por el otro lado. Pon sal y pimienta a tu gusto.
Disponer los platos en forma de roseta de boniato. Colocar un montón de puerros cremosos y luego las vieiras. Rocíe con beurre blanc de naranja y disfrute sin demora.
