Recuerdo que cuando era niño, mis padres me llevaban a a un restaurante chino en el distrito 13 de París, el «Village Tao-Tao» (que todavía existe), y recuerdo muy bien que pedíamos estas tostadas de gambas fritas que me gustaban mucho. En realidad, es una receta tailandesa de y es realmente una alegría para mí volver a hacerla como parte de mi blog. Una delicia, rápida de preparar. Tostada extra crocante, cubierta de ajonjolí dorado, con un relleno húmedo de camarones. Servidos con una salsa dulce y picante, ¡son una delicia para los gourmets!
Receta de «Tostada frita con gambas»: para 10 medias tostadas:
-5 rebanadas de pan sin corteza -250 g de gambas crudas peladas -1 clara de huevo -2 cucharaditas de almidón de tapioca (o almidón de maíz) -1 cucharadita de aceite de sésamo -1 o 2 dientes de ajo -Jengibre fresco rallado (1 o 2 cm) -100g de semillas de sésamo tostadas -Hojas de cilantro (yo no las uso, pero son igual de deliciosas) -Aceite para freír -salsa dulce y picante para acompañar
Ponga las gambas crudas peladas, la clara de huevo, el aceite de sésamo (eventualmente el cilantro) y la harina de maíz en el bol de una batidora.
Rallar el jengibre fresco.
Rallar o aplastar el diente o dientes de ajo.
Encienda el procesador de alimentos y mezcle.
Poner el relleno sobre las rebanadas de pan (sin la corteza).
Extiéndalo uniformemente con un cuchillo por toda la superficie. Poner las semillas de sésamo tostadas en un plato y colocar el pan tostado en el lado del relleno.
El resultado son rodajas perfectamente recubiertas de semillas de sésamo tostadas.
Cortar las rebanadas en diagonal (o en cuatro, o lo que sea, ¡en realidad!).
Calienta el aceite en una sartén (necesitas al menos 1cm de aceite en la sartén). Puedes coger una sartén más grande para freír más tostadas. Luego se fríe primero el lado del sésamo tostado.
Cuando la superficie esté bien dorada, dale la vuelta y fríe el otro lado.
Dejar enfriar unos instantes sobre papel absorbente antes de servirlo bien caliente y crujiente.
Servir con una salsa dulce y picante (¡se puede encontrar en las tiendas de comestibles chinas sin ninguna dificultad!).
