«Pull me up» o Tiramisú en italiano, hace honor a su promesa. ¡Una cucharada de este pastel cremoso y suave y los espíritus se levantan de inmediato! Con esta receta, obtienes un tiramisú ligero, aireado, deliciosamente cremoso y que se derrite, que no se corre.
Receta para 4 a 6 personas:
-500g de mascarpone
-2 huevos grandes (de gallinas camperas, por favor)
-80g de azúcar en polvo
-2 cucharadas de azúcar glas
-unas gotas de zumo de limón (o cremor tártaro)
-2 paquetes de bizcocho
-una taza de café fuerte
-amaretto
-cacao en polvo sin azúcar
Las instrucciones
Comience por separar las yemas de las claras. Poner las yemas en un bol con el azúcar glas. Batir las yemas lo más posible.
Añadir el mascarpone y seguir batiendo para obtener una crema aireada.
En otro bol, batir las claras a punto de nieve con el azúcar glas y el zumo de limón (o el cremor tártaro para los que lo tengan).
Añadir estas claras a la primera mezcla de mascarpone. Mezclar suavemente, levantando la crema para que las claras no se bajen.
Preparar un café fuerte y añadirle amaretto. La cantidad depende del gusto individual. Pero 2 o 3 cucharadas de amaretto para una taza de café me parece bien. Sumergir los bizcochos uno a uno en el café durante 4 o 5 segundos para que se empapen bien, pero tampoco empapar estos frágiles pasteles.
Colocar los bizcochos en una fuente de servir, presionándolos. A continuación, vierta la crema de mascarpone por encima, extendiéndola bien. Se pueden hacer pequeños tiramisús en ramequines pequeños. Yo hice las dos cosas, las puedes ver en las fotos de esta receta.
Dejar en la nevera durante al menos tres horas. En el último momento, espolvorear el cacao con un colador de té, ya sea directamente en los pequeños ramequines o después de servir una porción en un plato.
