Tartaletas para hacer en agosto, ¡la temporada por excelencia de las moras! Una cremosa compota de plátano con vainilla sobre una base de hojaldre extra crujiente es el complemento perfecto para estas delicadas bayas. Hice estas tartas con moras recogidas en un camino de zarzas y ortigas, ¡así que un postre bien merecido!
Receta para 8 tartas de compota de moras y plátano a la vainilla:
Masa dulce:
-210g de harina
-125g mantequilla sin sal en trozos
-25g de polvo de almendras
-50g huevo batido
-1 pizca de sal
-35 g de azúcar glas
-4 plátanos
-100g de azúcar moreno
-2 vainas de vainilla
-250g de moras
Preparar la masa dulce:
Poner la almendra molida, el azúcar glas, la harina, la sal y la mantequilla troceada en el bol de la amasadora.
Lija la mezcla para incorporar la mantequilla con la «k» del robot. ¡O a mano!
Agregue el huevo batido con anticipación y mezcle solo para incorporarlo, ¡pero no más!
Coloque una bola de masa en papel pergamino y coloque una segunda hoja de papel sobre ella. Unta con el rodillo sin agregar harina, todo queda limpio!!
Estirar la masa bastante fina y forrar con 8 círculos de tarta. cm, asegurándose de aplanar la masa en la parte inferior del círculo. ¡El ángulo recto debe ser perfecto!
¡Corta el exceso de masa pasando un cuchillo por el círculo!
¡Haz lo mismo con todos los círculos! Pinchar el fondo de la masa con un tenedor en todos los círculos. Luego poner una hoja de papel celofán ( ESPECIAL COCCIÓN MICROONDAS!! Las demás se derriten! ) sobre una base de hojaldre.
¡Rellene con harina presionando hacia abajo para llenar el fondo en ángulo recto!
Y cierra como un pequeño bulto.
¡En esta etapa, tenemos pequeñas ojeras perfectamente oscuras!
Dejar reposar en una bandeja para hornear forrada con papel pergamino en el refrigerador durante una hora.
Precalentar el horno a 180°C.
Hornee durante 15 minutos a 180°C con la bolsa de harina, luego, después de un tiempo, retire la bolsa simplemente tirando hacia arriba. Retire todas las bolsas de esta manera.
Retire con cuidado las bases de la masa también. Vuelva a poner la masa en el horno durante 15-20 minutos, observando.
¡Obtenemos entonces bases de masa listas para ser rellenadas con una deliciosa crema de chocolate!
Si hemos hecho bien el trabajo, ¡podemos ver el ángulo correcto!
Preparar la compota de plátano.
Poner en una cazuela los plátanos pelados, el azúcar y la vaina de vainilla (en la foto, sólo hay 2 plátanos, yo hice menos, quería 4 tartas)
Triturar los plátanos con un tenedor y ponerlos a fuego lento.
Dejar cocer unos diez minutos, para que se evapore el jugo líquido y se obtenga una consistencia similar a la de la compota.
Abrir la vainilla y raspar el interior, añadir la vainillina a la compota de plátano.
La compota de plátano está lista. Deje que se enfríe por completo.
Cubra las conchas de pastelería horneadas con 2 cucharadas de compota de plátano.
Y cubrir con moras.
Dejar en la nevera durante una hora antes de servir.
