Después de mi kouign aman y los kouignettes de frambuesa, quería hacer un pastel inspirado en este ambiente y en la asociación mantequilla/azúcar. Con manzanas, harina de trigo sarraceno y, sobre todo, una buena dosis de mantequilla medio salada, ¡este pastel se puede hacer cuando hay nubes en el cielo! Como este verano no ha sido el más llamativo ni el más caluroso, es un buen motivo para meterse en la cocina.
Ingredientes para un pastel de 24 cm:
-120g de harina
-80g de harina de trigo sarraceno
-2g de sal
-5g de levadura fresca o medio paquete de levadura de panadería seca
-200g de mantequilla semi-salada
-180g de azúcar
-3-4 manzanas o más
Poner la harina y la harina de alforfón en el cuenco de una batidora o en un bol.
Añade la sal. Disolver la levadura en un poco de agua tibia y verterla en el bol.
Amasar y añadir agua hasta que se forme una bola de masa. Depende de la capacidad de absorción de sus harinas. Si está demasiado húmedo, añade un poco de harina, si está demasiado seco, un poco de agua. Amasar en un procesador de alimentos o a mano durante 15 minutos.
Cortar la masa en forma de cruz.
Colocar un trozo de film transparente encima y dejar que se hinche en un lugar cálido durante 2-3 horas.
Con la harina de trigo sarraceno, la masa no se parece demasiado a una masa de pan más clásica. Contiene menos gluten.
En una superficie de trabajo ligeramente enharinada, extienda la masa lo más finamente posible en forma de rectángulo. ¡No es fácil porque la masa es un poco temperamental! Extender la mantequilla semi-salada por encima (hasta 2 cm del borde) y espolvorear con el azúcar.
Doblar en tres y girar la masa 90°. Extienda de nuevo a lo largo y vuelva a doblar en tres. Hazlo una vez más. No es fácil y habrá que enharinar regularmente la superficie de trabajo.
La masa tiene tendencia a romperse, pero no importa porque al final no se hace un verdadero kouign aman.
Untar con mantequilla un molde de 24 cm y añadir las mitades de manzana. Tuve que poner un total de 4 manzanas. Puedes poner todos los que quieras, de todas formas se hornearán debajo de la masa.
Extienda la masa por última vez hasta alcanzar el tamaño del molde y colóquela sobre las manzanas.
Hornear a 180°C hasta que la masa esté bien dorada y caramelizada (40 minutos).
