Una generosa tarta rellena de ganache de chocolate blanco y frambuesas frescas. Un bocado de esta crujiente tarta de coco con esta capa de crema fría de vainilla y suaves y jugosas frambuesas, ¡te transportará!
Receta de «Tarta de frambuesas y chocolate blanco» para 4 personas:
La masa: (hay suficiente masa para dos tartas…)
-125g de mantequilla blanda
-35 g de azúcar glas
-50g de huevo
-210g de harina
-25g de polvo de almendras
-la punta de un cuchillo de vainilla en polvo
La ganache: (duplicar los ingredientes si se hacen dos tartas o una muy grande…)
-200g de chocolate blanco
-10cl de crema completa
-25g de azúcar invertido
-25g de manteca de cacao
la punta de un cuchillo de vainilla polvo
-250 g de frambuesas frescas
Preparar la masa dulce:
Poner la almendra molida, el azúcar glas, la harina, la sal y la mantequilla troceada en el bol de la amasadora.
Lijar la mezcla para incorporar la mantequilla con la «k» del robot de cocina. O a mano.
Añadir el huevo batido con antelación y mezclar sólo para incorporarlo, ¡pero no más!
Coloque una bola de masa en papel pergamino y coloque una segunda hoja de papel sobre ella. Unta con el rodillo sin agregar harina, todo queda limpio!!
Estirar la masa bastante fina y forrar con 8 círculos de tarta. cm, asegurándose de aplanar la masa en la parte inferior del círculo. ¡El ángulo recto debe ser perfecto!
¡Corta el exceso de masa pasando un cuchillo por el círculo!
¡Haz lo mismo con todos los círculos! Pinchar el fondo de la masa con un tenedor en todos los círculos. Luego poner una hoja de papel celofán ( ESPECIAL COCCIÓN MICROONDAS!! Las demás se derriten! ) sobre una base de hojaldre.
¡Rellene con harina presionando hacia abajo para llenar el fondo en ángulo recto!
Y cierra como un pequeño bulto.
¡En esta etapa, tenemos pequeñas ojeras perfectamente oscuras!
Dejar la mezcla en una bandeja de horno forrada con papel de hornear en un lugar fresco durante una hora.
Precalentar el horno a 180°C.
Hornee durante 15 minutos a 180°C con la bolsa de harina, luego, después de un tiempo, retire la bolsa simplemente tirando hacia arriba. Retire todas las bolsas de esta manera.
Retire con cuidado las bases de la masa también. Vuelva a poner la masa en el horno durante 15-20 minutos, observando.
¡Obtenemos entonces bases de masa listas para ser rellenadas con una deliciosa crema de chocolate!
Si has hecho bien el trabajo, puedes ver el ángulo correcto.
A continuación, saque la masa, retire el aro y ponga la masa con cuidado en una rejilla para que se enfríe.
A continuación, prepare el ganache. Poner el chocolate blanco (o de cobertura marfil) en trozos en un bol.
Hervir la nata, la manteca de cacao, el azúcar invertido y una pizca de vainilla en polvo a fuego moderado.

Enfriar durante al menos 2 o 3 horas.
Terminar colocando las frambuesas de forma armoniosa. Manténgalo refrigerado hasta que esté listo para servirlo.
Por supuesto, se puede espolvorear con azúcar glas.
