Este es un pastel de fresas muy ligero que mi madre hizo para una cena. Todo el mundo pensó que era realmente delicioso y por eso me envió la receta. Lo había hecho un poco «de improviso», como suelo hacer, y lo anotó todo. Un pastel muy fácil de hacer, rápido de preparar y que se come sin esfuerzo. Además, ¡casi tendríamos la conciencia tranquila! Para disfrutar del verano un poco más.
Receta de tarta de fresas para un molde de 20 cm
Galleta de pistacho (o almendra):
-2 huevos
-65g de azúcar
-30g de harina
-35g de pistacho o almendra en polvo
-20g de mantequilla blanda
Crema de fresa:
-500g de fresas frescas
-95g de azúcar
-el zumo de medio limón
-210g de nata líquida entera
-5 hojas de gelatina
Puñetazos:
-jarabe o licor de fresa o frambuesa
-Brandy de frambuesa
200 g de fresas para la decoración
En primer lugar, prepare su galleta. Bata los huevos y el azúcar a alta velocidad hasta que la mezcla esté muy aireada y espumosa.
Mientras tanto, mezclar la harina y el polvo de pistacho.
Cuando la mezcla esté muy espumosa, añadir la harina y el polvo de pistacho.
Mezclar levantando la mezcla como una mousse.
Verter la mantequilla derretida y mezclar suavemente.
Prepare su molde desmontable de 20 cm (8 pulgadas) de diámetro con un borde desmontable (si es posible). Forrar el fondo con papel de horno y engrasar ligeramente el borde interior.
Verter la masa y hornear durante 20 minutos a 180°C.
Abrir el molde y colocar con cuidado el bizcocho en una rejilla.
Poner las fresas y el azúcar con el zumo de medio limón en una batidora para reducirlo a un zumo espeso. Poner en remojo las hojas de gelatina en agua fría.
Coge una pequeña porción (medio bol) del zumo de fresa y caliéntalo en el microondas o en un cazo. Cuando esté caliente, añadir las hojas de gelatina escurridas.
Montar la nata fría, añadir el zumo de fresa poco a poco y finalmente el zumo que contiene la gelatina.
Mezclar levantando con una espátula.
Poner film transparente en el fondo del mismo molde de 20 cm. Para que se pegue bien y no se arrugue, aceité la placa inferior y luego puse el film transparente. Coloca las fresas en el fondo según la decoración que elijas.
Vierta la mitad de la crema de fresas.
Cortar la galleta de pistacho por la mitad y colocar una mitad sobre la crema.
Sumérjalo en una mezcla de brandy y jarabe.
Vierta el resto de la crema y luego el segundo disco de hojaldre que empapará. Poner un film transparente sobre el conjunto y meterlo en la nevera durante al menos una noche (10 horas como mínimo).
Al día siguiente, pase un secador de pelo por el borde de la sartén, vuélquela en un plato y desmolde. Retirar el plato inferior (¡que ahora está encima!) y quitar el film transparente en el último momento, justo antes de devorar.
Esta tarta es muy ligera y probablemente sólo le darás unos cuantos bocados aunque no sea tan pequeña.
