Como prometí, os ofrezco una receta de tarama por semana. Esta vez, una tarama de camarones cremosa. De este modo, ¡estará listo para preparar sus propias taramas variadas para las fiestas! Receta de «tarama» para 4 a 6 personas:
-70g de pan rallado (pan sin corteza, pero de calidad)
-1/2 de yema de huevo (sólo hay que coger un poco de yema)
-una bolsa de 280 g de huevas de bacalao ahumado (o de salmonete si está disponible)
-170g a 200g de aceite
-1/2 vaso de leche -400g a 500g de gambas cocidas y peladas
Empiece por quitar la corteza del pan. Compré pan de Poilâne, que tiene una miga densa y deliciosa. Es muy fácil con una miga fresca.
Poner la miga en un bol y verter suficiente leche para empaparla completamente.
Escurre la miga en tu mano. Retirar el exceso de leche del bol. Vuelva a colocar la miga en el bol. Si el pan aún contiene un poco de leche, ¡es bueno porque la tarama aguantará aún mejor!
Añada media yema de huevo (no le dará ningún sabor, pero proporciona la proteína necesaria para emulsionar el aceite).
Mezclar a baja velocidad con un batidor eléctrico durante 2 minutos, para romper la proteína de la yema de huevo y la leche.
Añadir el equivalente a dos o tres cucharadas de aceite mientras se sigue mezclando a baja velocidad. Esto iniciará la emulsión. El aceite comienza inmediatamente a encerrarse en pequeñas «cápsulas» de agua (que proviene de la leche y gracias a la media yema).
Aquí hay una bolsa de huevos de bacalao ahumado.
Ábrelo con un cuchillo por un lado. Sólo queda retirar los huevos con una cuchara.
Añadir los huevos (sin la piel).
A continuación, empezar a mezclar hasta que todos los trozos de bolsa hayan desaparecido.
Añadir el resto del aceite en un chorro fino, subiendo lentamente como si fuera una mayonesa.
¡No hagas la tarama con una batidora como he leído en algunas recetas!
