Esta es una forma original de comer salmón. Sugiero marinar el salmón en una salsa teriyaki casera caliente. Sólo queda cocinar rápidamente el salmón, que quedará caramelizado en la superficie y deliciosamente tierno y apenas cocido en el interior.
Receta de «mi-cuit de saumon teriyaki»:
-2 filetes de salmón sin piel y sin espinas
-60ml de salsa de soja
-60ml de salsa de mirin
-30g de vergeoise rubia (o de azúcar en polvo, ¡también está bien!)
-Aceite de sésamo tostado
-Semillas de sésamo tostadas
Comienza preparando la salsa teriyaki, una salsa japonesa bastante dulce.
Esta es la salsa mirin que es la base de la salsa teriyaki. Pero también puedes comprar una salsa teriyaki ya preparada, ¡la única diferencia es que cuesta mucho menos hacerla tú mismo!
Poner la soja, el mirin y la vergeoise en un cazo.
Llevar a ebullición y hervir durante tres o cuatro minutos.
Retirar la sartén del fuego.
Poner el salmón crudo directamente en la salsa caliente. Esto pre-cocinará el salmón. Dejar marinar durante al menos dos horas.
Poner un poco de aceite de sésamo en una sartén muy caliente. Añadir el salmón, cortado en trozos o no.
El salmón se caramelizará muy rápidamente. Esto es lo que queremos. Se ha precocinado en la salsa, luego el azúcar de la salsa también lo ha cocinado un poco, así que lo único que queda por hacer es asar ambos lados del salmón.
Espolvorear con semillas de sésamo tostadas y servir inmediatamente con arroz.
