De niño odiaba las espinacas, pero cuando crecí empecé a adorarlas. ¡Probablemente por la perfecta combinación de carne, patatas fritas y un buen vaso de vino tinto que se come en Argentina! Suave y cremosa, ¡es imprescindible para cocinar fácilmente! Así que quise hacer un risotto que retomara esta idea. ¡El resultado fue tan sabroso que no puedo resistirme a publicarlo aquí! Este risotto de espinacas se aleja definitivamente del dogma de esta receta, pero para mí el risotto se puede adaptar de muchas maneras. Sólo importa el sabor final… Soy un tradicionalista, ¡pero esto es tan bueno!
Receta de un risotto de espinacas para 4 personas:
-300 g de arroz para risotto (a su elección) -1 litro de caldo de verduras -2 cubos de «oro» -1 cebolla -15cl de vino blanco dulce -2 cucharadas de aceite de oliva -40g de mantequilla salada -500g de espinacas -125g de mascarpone -40 g de queso parmesano recién rallado
Lavar cuidadosamente las hojas de espinacas. Lleno mi fregadero con agua, lavo bien las hojas y luego las enjuago.
Quitar el nervio central de las hojas. Exprimir bien (en un centrifugador de ensalada).
Derretir la mantequilla salada en una sartén. Añade las hojas de espinaca a medida que avanzas.
Hay un gran volumen que se reducirá considerablemente al cocinar.
Cuando el agua que han desprendido las espinacas se haya evaporado (unos buenos quince minutos de cocción a fuego bastante alto), añadir el mascarpone.
Mezclar bien, añadir sal y pimienta… ¡probar!
Las espinacas están deliciosas en esta fase, pero yo las dejo cocer un poco más hasta que el mascarpone sea «absorbido» por las espinacas. Al tomar una cucharada de espinacas, se puede ver si la crema se escapa o si las espinacas y la crema forman un conjunto. En este punto, ¡está hecho! Detener la cocción y reservar.
Preparar el risotto: Comience por picar la cebolla finamente. Fríelo a fuego lento en aceite de oliva.
Cuando se vuelva transparente, añada el arroz y cúbralo con grasa (¡perléelo!).
Añadir el vino blanco y dejar que el arroz lo absorba a fuego lento.
Nota de Bernard: para esta receta, no tenía vino blanco seco en casa. Tomé una base de Pineau des Charentes que tenía en la nevera. El resultado fue realmente excelente, con el risotto tomando una nota dulce…
Cuando el arroz se haya «bebido» todo el vino, añadir el caldo de verduras (con 2 pastillas knorr extra).
Cada vez que el arroz se beba el líquido, añadir un cucharón más.
Cuando se haya absorbido todo el caldo, añadir las espinacas a la crema. No hay que ponerlo todo, se puede ir poniendo poco a poco hasta que el risotto tenga el aspecto y el sabor adecuados. Por mi parte, ¡pongo casi todo!
Añadir el queso parmesano recién rallado.
Mezclar bien y servir inmediatamente con un poco de parmesano rallado. ¡Una pura maravilla! Yo lo comí con una cazuela de huevos con nata, pero entiendo que esto puede parecer un poco pesado para algunos. Se puede servir con un simple huevo escalfado sobre el risotto.
