Soy un poco fanático de la carne frita y crujiente. Durante mucho tiempo me pregunté cómo hacer buñuelos que permanecieran crujientes, a pesar de la presencia de salsa. Había presentado una receta casi similar con la misma técnica, concretamente el crujiente de ternera con caramelo y pimienta (receta AQUÍ). Durante años he probado muchas variaciones: harina de arroz, almidón de trigo, almidón de maíz, almidón de patata, con clara de huevo, sin ella, etc. Pero había encontrado la respuesta en Vietnam y resulta que es con y sólo con almidón de tapioca que funciona. El resultado es una locura: la carne es extra crujiente, el donut muy crujiente, ¡incluso cuando se enfría!
