Coloca las avellanas crudas enteras en una fuente apta para el horno y haz lo mismo con el polvo de avellana.
Mételo en el horno a 170°C durante unos treinta minutos. Hay que remover el polvo de avellana con bastante regularidad para que se tueste uniformemente. Al final, el polvo adquiere un bonito color caramelo.
Para las avellanas enteras, la piel debe resquebrajarse y deben estar bien doradas. Vierte en un cuenco el polvo de avellana tostada, el azúcar moreno, la harina, la levadura en polvo y la sal. Mezcla.
Vierte los 180 g de clara de huevo (para ello, reúne las claras de 5 huevos o más y pesa la cantidad necesaria). Vuelve a mezclar. La masa debe quedar lisa.
Verter en un molde, forrar la base con papel sulfurizado y engrasar el borde interior. Viértelo sobre la masa y, a continuación, espolvorea por encima los trocitos de avellana tostada triturada.
Cuece durante 40 minutos a 155°C a fuego estático (no con ventilador), luego baja la temperatura a 120°C con la función vapor, si tienes esta opción, y cuece durante 30 minutos más. Sin la función de vapor, baja la temperatura a 120°C colocando un recipiente con agua hirviendo en el fondo del horno y hornea durante 30 minutos. Deja enfriar el pastel, desmolda con cuidado y espolvorea con azúcar glas al gusto.
