Hamburguesa con foie gras, crema de boletus y cebolla caramelizada
La gente me pregunta a menudo si me gustan las hamburguesas. No, no me gustan, ¡me encantan! Pero luego una hamburguesa muy buena, con el pan casero. O en un restaurante donde todo se hace en el momento. Había puesto una receta de hamburguesa más clásica en mi libro 'Le Grain de Sel' y una vegana en 'Végéterrien'. Comí una hamburguesa de foie gras en Périgueux y quise hacer una para los amigos antes de que terminara el invierno. El resultado es un poco demoníaco y permanece en el ámbito de lo excepcional. No lo voy a hacer siempre, porque es decadente pero totalmente delicioso. La hamburguesa es suficiente en sí misma, sin patatas fritas de acompañamiento, una buena ensalada si es necesario, pero sobre todo una buena copa de vino tinto. La combinación de cebollas caramelizadas, crema de setas, foie gras frito y filete cocinado como a mí me gusta es totalmente irresistible...
