Los «quindins» o «quindim» en singular (se pronuncia «kine djine») también nos llegan (después del pastel de guayaba) desde Brasil… La primera vez que lo comí fue en Río, en la cafetería «Confeitaria Colombo». Y confieso: no me ha gustado… ¿Por qué? Porque no sabía lo que contenía. Luego me lo comí de nuevo. ¡Una y otra vez y ahora estoy enganchado! E incluso ahora encuentro este pequeño pastelito casi mágico. Imagínate… Todos los ingredientes se mezclan en una batidora, se vierten en moldes y se separa el pastel durante la cocción. Una versión de flan y otra de galleta de coco. Y todo funciona por sí mismo. ¿Qué es un quindim? Es una especie de flan de coco cremoso con yemas de huevo y azúcar. Una verdadera delicia, ¡muy práctica cuando te encuentras con yemas!
Receta para 28 quindins:
-12 yemas de huevo -50g de mantequilla -400g de azúcar -200g de agua caliente -100g de coco seco rallado
Precalentar el horno a 180°C. Poner en remojo el coco seco rallado en 200 g de agua tibia.
Dejar reposar durante 5 minutos.
Poner el azúcar y la mantequilla en una batidora.
Añadir el coco y el agua de remojo (¡si no ha sido absorbida toda por el coco!).
Añadir también las yemas de huevo.
Mezclar durante dos minutos para obtener una mezcla homogénea.
Estas son las cestas de pavo número 1. Están disponibles en varios tamaños. Colocar los mejillones en una fuente de horno.
Nota de Bernard: encontrar un molde de quindim en Francia es imposible. Incluso en São Paulo, no fue fácil. Así que puedes encontrar moldes pequeños que son más altos que los moldes para tartas. En el peor de los casos, se pueden hacer en ramequines pequeños.
En cualquier caso, unte cada molde con mantequilla.
Entonces endúlzalos. La mantecación y el azucarado es lo que hará que los quindines se desprendan de los moldes, aunque usemos moldes de aluminio.
Vierta la mezcla en la parte superior de cada molde. La masa no se hinchará.
Añadir agua hirviendo a la fuente que contiene los mejillones. El agua es necesaria hasta dos tercios de la altura de los mejillones.
Hornear a 180°C durante 50 minutos (o hasta que la superficie esté coloreada). ¡El coco flotará durante el proceso de cocción y es el coco el que hará el bizcocho!
Deje que se enfríe completamente y luego recorte el borde cuidadosamente con un cuchillo.
Sacar el quindim lentamente. Déjelo en la nevera durante dos horas más antes de servirlo brillante y fresco.
