El praliné no se come tal cual, sino que es la base de muchas recetas de dulces y postres de chocolate. Hacer el praliné es muy sencillo y no lleva mucho tiempo. Se puede hacer con almendras, con avellanas o con ambas.
Receta para 400 g de praliné:
-240g de almendras con piel (o avellanas o 50/50)
-160g de azúcar
-15g de agua
Verter el azúcar en una sartén. Poner a fuego medio.
Añadir agua y empezar a hervir.
Cuando el azúcar esté a 121°C, (sin termómetro se puede manejar muy bien, el azúcar empieza a formar burbujas cada vez más gruesas, el almíbar también se vuelve espeso) añadir las almendras de golpe.
Mezclar bien con una cuchara de madera para cubrir cada almendra con azúcar.
En este momento, el azúcar se tamizará, es decir, volverá a cristalizar. Sigue mezclando siempre.
El azúcar volverá a fundirse, esta vez caramelizándose.
Cuando todo el azúcar se haya caramelizado, retirar del fuego.
Vierta todo el contenido de la sartén sobre un tapete de silicona resistente al calor (silpat) o un mármol aceitado.
Deje que se enfríe por completo.
Una vez que la lámina de caramelo esté dura, rómpala en trozos.
Puedes guardar uno o varios trozos para decorar la tarta o para comerlo tal cual (¡con un té de menta está divino!). Estas piezas deben guardarse en una caja hermética.
Ponga el resto en una licuadora. Y empezar con pulsos sucesivos.
Después de unos segundos tienes un polvo de praliné que puedes reservar para helados o cremas de praliné. Guarde este praliné en una caja hermética.
¨Para obtener una pasta de praliné, deje que la batidora funcione hasta obtener una consistencia casi líquida. Depende de la potencia de la batidora. Aquí están las fotos de todos los pasos sucesivos. ¡Pero no dude que nosotros podemos obtener una pasta de elementos secos y duros! Cuanto más tiempo se deje en la batidora, más se triturará la masa .
Por último, aquí está el resultado tras una media de 5 minutos de molienda. Guarde la pasta de praliné en un tarro de mermelada limpio en la nevera o en una caja hermética.
