Ahora que he terminado mi próximo libro, puedo volver a mi cocina para realizar mi actividad favorita. Así que empiezo con calma con un nuevo pesto, esta vez un poco diferente. Con hojas de espinacas, cilantro fresco, cacahuetes tostados y lima. Tiene un empuje inesperado y da una frescura deliciosa. Será perfecto en muchas recetas o simplemente en una tostada.
Pesto :
100 g de hojas de espinacas
80 g de queso parmesano
2-3 dientes de ajo pequeños
75 g de cacahuetes tostados (si no están salados, añada sal en el fondo, si ya están salados, olvídelo)
50 g de cilantro fresco
100 g de aceite de oliva
zumo de media lima
la cáscara de media lima
Instructions :
Lavar y centrifugar las espinacas y las hojas de cilantro. Pelar los dientes de ajo. Cortar el queso parmesano en trozos. Ponga todo junto con los demás ingredientes en una batidora pequeña y póngala en marcha.
No olvides la ralladura y el zumo de media lima.
Mezcla con cuidado.
