La tarta de zanahoria es un dulce que viene de Estados Unidos. Solo ha sido famoso allí desde la década de 1960, pero rápidamente se convirtió en un estándar en la cocina estadounidense. Con su cheese icing (queso crema con azúcar glas) ¡es divina! En os ofrezco (después de muchos intentos) esta receta que contiene todos los elementos necesarios para su éxito. ¡Pasas, nueces, especias y, por supuesto, zanahorias! ¡Las zanahorias le dan una textura extra húmeda al pastel!
Nota: He puesto una cantidad impresionante de glaseado en la receta. Esta es la cantidad adecuada para este pastel. Este¡El glaseado es realmente bueno y el interés de este pastel es la combinación de todos los elementos de la receta!
¡Para las fotos hice un medio pastel (molde de 80mm x 160mm) con la mitad de todos los ingredientes!
Receta de tarta de zanahoria para 8 personas:
Pastel de zanahoria: -220g de harina -150g de azúcar -150g de vergeoise rubia -220g de aceite -3 huevos -120g de nueces -210g de zanahorias -80g de uvas rubias -2 cucharaditas de polvo de hornear -1 cucharadita de bicarbonato de sodio -1/4 cucharadita de vainilla líquida -2 cucharaditas de canela en polvo -1/4 de cucharadita de «4 especias -1/4 cucharadita de jengibre en polvo -1/2 cucharadita de sal
Glaseado de queso crema -200g de mantequilla blanda -480 g de queso crema Philadelphia (o 280 g de mascarpone + 200 g de Saint Morêt) -280 g de azúcar glas -1/2 cucharadita de vainilla líquida -la punta de un cuchillo de vainilla en polvo
Precalentar el horno a 180°C.
Mezclar en un bol las especias, el bicarbonato, la levadura en polvo, la sal, la harina, el azúcar y la vergeoise.
Añadir los huevos, la vainilla líquida y el aceite. Mezclar bien. El conjunto se mezcla muy fácilmente sin hacer grumos. A continuación, añadir las pasas y las nueces trituradas.
Pelar y lavar las zanahorias. Y rállalos.
Añadirlos a la masa y mezclar bien.
Mantequilla y harina (he utilizado la bomba de grasa de mi canelés ). Os recuerdo que para las fotos he utilizado un medio molde de 80mm por 160mm con la mitad de los ingredientes.
Verter la masa en el molde y hornear durante 50 minutos a 180°C.
Sacar el pastel del molde y darle la vuelta rápidamente.
Envuélvalo en film transparente sin demora. De esta manera, todo el vapor del pastel se quedará dentro y mantendrá el pastel húmedo. Deje que se enfríe por completo.
Cuando el pastel esté completamente frío, prepare el glaseado. Mezclar el azúcar glas y la mantequilla muy blanda con una batidora.
Añadir la vainilla líquida y la vainilla en polvo.
Terminar añadiendo la crema de queso Philadelphia o la mezcla de mascarpone y santo morêt (¡esto funciona perfectamente!).
Cortar la tarta horizontalmente en tercios.
Vuelva a colocar la base del pastel en el molde y extienda una generosa capa de glaseado por encima. Poner la segunda parte de la tarta y aplicar una segunda capa de glaseado.
Cerrar con la parte superior de la tarta. Considero que la mitad del glaseado es adecuado para las capas interiores.
Poner el molde en el frigorífico durante una buena hora para que se fije el glaseado. Sumergir la base del molde en agua caliente y, a continuación, volcar el pastel.
Cubrir el pastel con el resto del glaseado.
¡Decora como quieras! No he podido resistirme a hacer una versión ligeramente kitsch. ¡Pero el pastel está para morirse! Reservar en un lugar fresco durante al menos 3 horas antes de servir.
