Hace poco tuve que hacer una gran cena para 40 personas y aproveché para hacer algunas recetas nuevas. Quería una tarta enorme, con una masa deliciosamente mantecosa y un sabroso relleno. El pollo, los puerros, el apio y un toque de curry dan a este plato un sabor extraordinario. Esta tarta es realmente grande, pero puedes reducir las cantidades a la mitad con las medidas que te doy a continuación. Había hecho muchas ensaladas (¡ricas, no verdes!), ¡pero esta tarta fue un gran éxito entre mis invitados!
Receta para un círculo de tarta (¡enorme!) de 26 cm de diámetro y 6 cm de altura:
(a dividir por 2 para un círculo de 22 cm de diámetro y 4 cm de altura)
1,4 kg de pechuga de pollo
2 cebollas
3 puerros
3 tallos de apio
4 cucharaditas de curry amarillo en polvo
180g de Saint Môret
180 g de queso crema
aceite de oliva
sal pimienta
Pegar :
500 g de harina
335 g de mantequilla semisalada
80g de huevo
1 yema de huevo para dorar
Poner las pechugas de pollo en agua hirviendo con sal durante 12 minutos. En la foto hay menos, pero utilicé 1,4 kg de pechuga de pollo.
Guarde el agua de cocción para más tarde. Dejar enfriar .
Retire algunas de las partes verdes de los puerros, córtelos a lo largo en 4 trozos y luego en pequeñas tiras. Asegúrate de que están limpios y sin arena.
Pelar y cortar las cebollas en trozos pequeños. Poner en una sartén muy grande con 6 cucharadas de aceite de oliva.
Corta también los tallos de apio sin sus hojas.
Añadir el apio a la sartén y cocinar durante 10 minutos a fuego moderado.
Añadir los puerros y cocinar durante 20 minutos.
Los puerros deben estar bien cocidos.
Para el pollo, hay dos soluciones. Se puede desmenuzar con un tenedor, que es un poco largo para esta receta. También puedes poner el pollo (cocido y enfriado) en la batidora. Mezclar pulsando durante unos segundos.
¡Va mucho más rápido y es perfecto para la cantidad que tenemos aquí!
Añade unos 4 cucharones de los jugos del pollo (que habías reservado).
Vierta el polvo de curry.
Queso crema y Saint Môret. También puede utilizar sólo uno o el otro. En este caso, ¡se necesita un total de 360g!
Pon sal y pimienta a tu gusto. Ajuste la suavidad del relleno dejándolo secar a fuego lento, o añadiendo un poco del jugo de cocción del pollo.
Para la masa, poner en un bol la harina y la mantequilla semi-salada a temperatura ambiente.
Mezclar bien para que la mezcla sea homogénea. Si la mantequilla se aglutina demasiado rápido, ¡no te preocupes! Por último, añadir los 80 g de huevo. Para ello, bata dos huevos en una tortilla y vierta la cantidad deseada.
Deje que el procesador de alimentos funcione para agrupar la masa (¡o hágalo a mano!).
No es necesario descansar en la nevera. Extienda inmediatamente 3/4 de la masa sobre el papel de hornear.
Rellena tu anillo (o molde) engrasado con la mezcla. Como siempre, uso el agente de liberación.
Colocar el papel con el aro de hojaldre en una bandeja de horno y verter todo el relleno de pollo.
Extienda el resto de la masa.
Colocar la masa sobre el círculo.
Presionar bien la masa para unir la parte inferior y la superior. A medida que avanza, lo sellará y luego la masa se desprenderá.
¡Y luego un trabajo limpio!
Untar toda la superficie de la masa con yema de huevo.
Hornear a 180°C durante 1h30 aproximadamente. Como el relleno ya está cocido, sólo es necesario que la masa se cocine y se dore bien.
Delicadamente cortado.
Si lo comes caliente, te resultará difícil cortarlo en rodajas. Lo que hago para obtener rebanadas muy limpias: dejo que la tarta se enfríe completamente y luego la meto en la nevera durante al menos 3 horas. En este punto, es muy fácil cortar rodajas sin que la masa se rompa. Luego lo vuelvo a meter en el horno a 180°C durante 30 minutos para que vuelva a estar perfecto. Como las rebanadas ya están hechas, ¡sólo queda servirlas!
Sólo queda disfrutarla. Si hay demasiado, ¡puedes congelarlo!
