Esto me ha estado dando la lata durante un tiempo. Me encantan las gelatinas de frutas y me gustó buscar el porcentaje de azúcar y pectina según la fruta que quería. Así que empiezo con las pastas de fruta de la pasión. Una mezcla agridulce perfecta. Como es de esperar, vamos a necesitar algunos ingredientes más difíciles de encontrar (¡pero hoy en día están todos disponibles en Internet!). ¡Y las gelatinas de frutas caseras son tan buenas!
Receta de pastas de frutas (para 36 piezas de 3X3cm):
-400g de puré de fruta de la pasión
-400g de azúcar
-100g de jarabe de glucosa
-20g de pectina amarilla
-el zumo de medio limón -azúcar cristalino
En primer lugar, aquí están los dos productos que son más difíciles de encontrar para algunas personas. Pectina amarilla y puré de fruta de la pasión en una botella. Como siempre, compro en G.Detou.
Poner el puré de fruta de la pasión en un cazo a fuego lento y llevar a ebullición.
Mezclar una parte del azúcar (3-4 cucharadas grandes del peso total del azúcar) con la pectina amarilla.
Cuando el líquido hierva, añadir el azúcar-pectina.
Mezclar bien y volver a llevar a ebullición. Añadir el resto del azúcar.
Añadir también el jarabe de glucosa.
Nota de Bernard: para verterla fácilmente, puede calentarla 30 segundos en el microondas o al baño María. De esta manera se convertirá en líquido.
Añadir el zumo de medio limón, filtrándolo bien (en un colador de té, por ejemplo).
Llevar a 107°C sin dejar de remover.
Verter en un marco de 18X18cm colocado sobre un tapete de silicona. No te preocupes, el conjunto permanecerá estanco y el líquido no saldrá por debajo del marco…
Poner enseguida un film transparente sobre el contacto (realmente sobre el líquido). Dejar enfriar completamente y luego enfriar durante dos horas.
Aquí está mi guitarra para el ganache, el caramelo, la gelatina de frutas, etc.
Pero que no cunda el pánico. ¡Sigue siendo un juguete que me regalé por pura locura! Puedes cortar la pasta de fruta con un cuchillo. Sacar del molde pasando un cuchillo a lo largo de la masa cuajada y desmoldar.
Cortar en seis por cada lado.
A continuación, corte cada rebanada en 6 trozos.
Poner un poco de azúcar granulado en un recipiente y hacer rodar los trozos resultantes en él.
