Una sabrosa salsa que es ultra famosa en todo el mundo… La salsa boloñesa es en realidad un poco más compleja de lo que parece. En Italia, se trata más bien de un ragú de carne servido sobre pasta (normalmente tallarines, no espaguetis, o en lasaña) con muchos ingredientes que se cuecen a fuego lento durante horas. Cuanto más se cocine, mejor será… El mío se horneó durante casi 7 horas con un descanso nocturno. He estado en Bolonia dos veces en mi vida, pero en ese momento no tenía la idea de este blog. Pero allí todo el mundo tiene la mejor receta de la ciudad y cada cocinera tiene su pequeño secreto que la hace única. Esta salsa no tiene necesariamente tantos tomates. Pero sobre todo otras cosas que a menudo se olvidan fuera de Bolonia, como el vino tinto, el apio, la panceta, las setas porcini también… Nada difícil, lo que más tiempo requiere es la suave cocción que da a este plato todo su sabor. Aquí te doy la receta más tradicional, ¡por supuesto puedes adaptarla a tu gusto!
Receta de salsa boloñesa:
-1 zanahoria grande o 2 no muy grandes
-1 cebolla
-2 dientes de ajo
-2 tallos pequeños de apio
-2 cucharadas de aceite de oliva
-30g de mantequilla
-700g de carne picada
-200g de hígado de ave
-200ml de vino tinto
-150ml de leche
-20 g de setas secas (opcional)
-700ml de caldo de carne
-150 g de panceta (o tocino picado)
-180g de pasta de tomate doble
-2 cucharaditas de azúcar
unas hojas de perejil de hoja plana finamente picadas
-sal pimienta
Para servir: tallarines y parmesano fresco
Prepara tus verduras…
Picar finamente los dientes de ajo.
Cortar la cebolla en trozos pequeños. Poner el aceite de oliva, el ajo y la cebolla en una sartén grande.
Picar finamente los tallos de apio.
Entonces, córtalos en pedazos.
Poner en la sartén a fuego lento y remover.
Cortar la zanahoria en rodajas finas, primero en rodajas…
A continuación, las rodajas en bastones y, por último, en cubos pequeños.
Vierta la mezcla en la sartén.
Añadir la mantequilla y cocer a fuego lento sin necesidad de colorear.
Esta vez es el momento de añadir la carne. Mezclar bien para separar los grumos que puedan formarse.
Vierta el vino tinto.
La pasta de tomate doble (en la foto, no hay mucha, pero yo añadí mucha después, y la cantidad en la receta corresponde a lo que usé).
Vierta el caldo. A estas alturas, todo parece ser muy líquido. Esto es bastante normal…
Un poco de azúcar para endulzar la salsa (2 cucharaditas).
Y la leche. Deja que se cocine a fuego lento…
Mientras tanto, deje que las setas secas se hinchen en agua caliente durante 20 minutos. ¡Guarda el zumo de ceps!
A continuación, córtalas en trozos y pícalas finamente.
Añade los ceps a la salsa, ¡se cocinarán en ella! Vierta un poco del jugo de los boletus que ha guardado… En cualquier caso, la salsa se cocinará durante mucho tiempo y aunque parezca muy líquida, se cocinará hasta alcanzar la consistencia perfecta.
No es muy glamuroso en las fotos, pero vamos a picar unos hígados de pollo… Se puede prescindir de él, pero hace que el «ragu» sea aún más suave.
Ponerlos en la salsa que aún se está cocinando.
Un poco de perejil.
Y finalmente la panceta. Se puede sustituir por manteca de cerdo.
Córtalo en trozos pequeños/
Un rápido removido en una sartén caliente para tostarlas ligeramenteL
¡Y salta en la salsa!
Cocer a fuego lento durante 5-6 horas. Pon sal y pimienta a tu gusto.
Si la salsa queda demasiado espesa, basta con añadir un poco de agua. Lo que yo hago: lo dejo cocer durante 5-6 horas, luego apago el fuego y lo dejo reposar toda la noche. Al día siguiente (porque las salsas siempre son mejores al día siguiente…) añado un poco de agua y lo dejo cocer suavemente de nuevo hasta que tenga la consistencia perfecta.
Por supuesto, sirve la salsa sobre pasta «al dente» con un poco de parmesano recién rallado. En Bolonia, esta salsa se sirve sobre tallarines en lugar de espaguetis o en lasaña. Una delicia….
