Pesadilla para unos, deliciosa para otros, la morcilla rara vez deja indiferente. yo soy de los que les encanta! ¡Pero entonces de verdad! Aunque sé de qué está hecho. No muy glamuroso para fotografiar, este parmentier es sin embargo perfecto: manzanas salteadas en mantequilla, cebollas caramelizadas, puré de patata casero y morcilla de corral. Todo con una buena copa de vino tinto y una ensalada verde y la moral alta!!
Receta de parmentier de morcilla:
Puré de papa:
-800g de patatas
-80g mantequilla semisalada
– sal, pimienta, nuez moscada
-leche (a su conveniencia)
cebollas caramelizadas
-5 cebollas
-50g de mantequilla
-1 cucharada sopa de aceite
-1 cucharada de azúcar
-se, pimienta
-3-4 manzanas
-25g de mantequilla
– sal, pimienta, nuez moscada
-400g de morcilla de corral
Primero prepara el puré. Pela las papas y cocínalas de 20 a 30 minutos en agua (o incluso al vapor). Bastará con comprobar la cocción clavando un tenedor en una patata grande. Ella debería poder entrar allí fácilmente.
Escurra las papas y luego regréselas a la sartén. Machácalos hasta hacer un puré. Yo prefiero el puré de patatas con grumos, ¡qué bueno!
Luego agrega la leche hasta lograr la consistencia de puré que más te guste.
Prepara las cebollas caramelizadas. Por supuesto, puedes hacerlos mientras se cocinan las papas. Poner la mantequilla y el aceite en una sartén.
Agregue las cebollas en rodajas finas.
Agregue azúcar, sal, pimienta. Deja que se caramelicen a fuego bastante alto. Tan pronto como el color se vuelva demasiado pronunciado, agregue un poco de agua.
El agua dispersará los jugos a lo largo de las cebollas. Cocine hasta que esté bien coloreado y las cebollas estén bien cocidas.
Pelar y descorazonar las manzanas. Cortar en rodajas finas.
Calentar una sartén a fuego alto con un poco de mantequilla. Añade las manzanas.
Coloréalos rápidamente sin dañarlos demasiado. Se cocinarán más tiempo en el horno.
Prepara tu morcilla.
Pelarlo y triturarlo con un tenedor o con la mano.
Ahora llena tu plato. Poner una capa de manzanas fritas.
Luego poner la salchicha (aquí lleno un plato pequeño porque hice dos) luego las cebollas caramelizadas.
Terminar con puré de patatas.
¡Está listo para ir al horno!
¡Cocine hasta que la parte superior comience a tomar un color agradable y luego disfrute con una ensalada verde y una buena copa de vino tinto!
