Hace poco volví de Barcelona y pude probar estos pastelitos en Caelum, una pastelería especializada en dulces de monasterio. En cuanto llegué a casa, me metí en la cocina para hacer algunos más como los que había visto. La receta es muy rápida y fácil de preparar y estas albóndigas de almendras y piñones se conservan durante mucho tiempo. Una receta perfecta para los amantes de los frutos secos, con los piñones y su sutil y delicado sabor.
Receta para unos 20 panellets de almendra y piñones:
-150g de polvo de almendra
-85g de azúcar
-55g de claras de huevo
-150g de piñones -1 cucharadita de extracto de almendra amarga (opcional, ya que los piñones se notarán menos)
Las instrucciones :
Poner el azúcar y la almendra en polvo en un bol.
Mezclar y añadir la clara de huevo (y posiblemente el extracto de almendra amarga).
Mezclar a mano hasta formar una bola de masa.
Dividir la masa en bolas de 12 a 13 g cada una.
Aquí están los piñones que me traje de España. Una pequeña maravilla…
Coge un buen puñado de piñones y coloca una bola de masa encima.
Apretar los piñones en la masa…
Para que tengas una bola con muchos piñones que no se escape durante la cocción.
Haz lo mismo con todas las bolas de masa.
Colóquelos en una bandeja de horno forrada con papel de hornear y métalos en un horno de ventilador precalentado a 180°C.
Hornear los panellets durante 20 minutos hasta que los piñones estén dorados. Por lo tanto, ¡tendrá que adaptarse a la potencia de su horno! Sacar las albóndigas del horno y dejarlas enfriar sobre una rejilla.
Guárdelos en una caja hermética, protegidos del aire y de la desecación.
Panellets aux Amandes et Pignons de Pin (Empiñonados)
Je reviens récemment de Barcelone et j’ai pu déguster ces petits gâteaux chez Caelum, pâtisserie spécialisée dans les douceurs de monastères. Dès que je suis rentré à la maison, je me suis en cuisine pour en refaire comme ceux que j’avais vus. La recette est très rapide et simple à préparer et ces boulettes aux amandes et aux pignons se conservent assez longtemps. Une recette parfaite pour les amoureux des fruits secs qui fait la part belle aux pignons et à leur saveur subtile et délicate !
1c. à caféExtrait d’amande amère(facultatif car on sentira un tout petit moins les pignons)
Instrucciones
Mettez le sucre et la poudre d’amandes dans un récipient.
Mélangez et ajoutez le blanc d’œuf (et éventuellement l’extrait d’amande amère).
Mélangez à la main pour obtenir une boule de pâte.
Divisez la pâte en boulettes de 12 à 13g chacune.
Voici les pignons que j’ai rapportés d’Espagne ! Une petite merveille…
Prenez une bonne poignée de pignons de pin et placez une boulette de pâte dessus.
Serrez bien pour enfoncer les pignons dans la pâte…
De façon à avoir une boule avec plein de pignons dessus qui ne s’échapperont pas à la cuisson.
Faites de même pour toutes les boulettes.
Placez-les sur une plaque à pâtisserie garnie de papier sulfurisé puis enfournez dans un four à chaleur tournante préchauffé à 180°C.
Faites cuire les panellets pendant 20 minutes jusqu’à ce que les pignons soient bien dorés. Il faudra donc adapter à la puissance de votre four ! Sortez les boulettes du four et laissez-les refroidir sur une grille à pâtisserie.
Conservez-les dans une boite hermétique à l’abri de l’air et du dessèchement !
