¡Cualquiera que haya estado en Tailandia o en un restaurante tailandés y haya probado este postre sabe que el «arroz pegajoso de mango» es totalmente adictivo! Si te gusta el arroz con leche, esta receta es para ti. Estamos aquí con un riquísimo arroz meloso con leche de coco, ligeramente endulzado con azúcar de palma, acompañado de trocitos de mango fresco. Es simplemente irresistible. ¡Y para los más cuidadosos, sin gluten y veganos!
Para 4 personas :
250 g de arroz glutinoso
una cucharadita de frijol mungo amarillo (opcional)
250 ml de leche de coco
40g de azúcar de palma (o en su defecto azúcar moreno) creo que es suficiente
1/2 cucharadita de sal
1/2 cucharadita de aroma de pandano
1 mango muy maduro
Para esta receta, remoja el arroz glutinoso en agua durante al menos 3 horas.
Pesar la cantidad necesaria.
También puedes dejarlo toda la noche, ¡no hay riesgo de que el arroz se hinche demasiado!
También remoje una cucharadita de frijol mungo amarillo en un recipiente pequeño con agua fría.
Aquí hay azúcar de palma. Puedes sustituirlo por azúcar moreno.
Cuando el arroz se haya empapado lo suficiente:
Vierta la leche de coco en una cacerola pequeña con el azúcar, la sal y el aroma de hoja de pandano. Calienta a fuego lento hasta que el azúcar se haya disuelto. Libro.
Tomé sabor artificial, pero si buscas en la red, puedes encontrar los naturales. También puedes hacerlo tú mismo con hojas frescas. La hoja de pandanus tiene un aroma muy particular que tiende hacia la avellana, es muy sorprendente. Pronto les daré una explicación sobre cómo hacer su agua de hoja casera.
Tendrás que cocer al vapor el arroz glutinoso. Escúrralo bien, luego enjuáguelo sin frotarlo entre las manos, porque el arroz es en esta etapa (después del remojo) frágil, puede desmoronarse. Una vez escurrido, colóquelo en una canasta de bambú preferiblemente, ya que esto le dará un sabor inimitable.
Coloque la cesta sobre una cantidad de agua hirviendo. El fondo de la canasta no debe tocar el agua. También puedes cocinarlo en una vaporera más tradicional. Pero especialmente no en la sartén. Solo el vapor producirá un verdadero arroz pegajoso.
Coloque una tapa y cocine el arroz durante una buena media hora.
Mientras tanto, limpie los frijoles mung con una toalla de papel.
A continuación, freírlos en una pequeña cantidad de aceite en una sartén.
Una vez que el arroz esté cocido, viértelo en un bol.
Agregue la leche de coco caliente (calentada si es necesario) mientras mezcla.
El arroz pegajoso beberá lentamente la leche de coco. Así que añádelo sobre la marcha.
Pelar y cortar el mango en trozos.
