A veces, ser bloguero gastronómico es realmente genial, porque he recibido dos cajas de vino de Plaimont. Y como soy un gran aficionado al vino tinto, estaba muy contento. Te propongo dos recetas que combinan perfectamente con el vino tinto. Aquí está el primero con esta pechuga de pato finamente precortada para su perfecta cocción, acompañada de un puré de kabocha y boniato con un crumble de trigo sarraceno y avellanas, shiitake al ajo y crujiente de Rattes du Touquet. Puedes sustituir la kabocha por otra calabaza y las setas shiitake por otras más tradicionales.
Receta para 6 personas :
Crumble de trigo sarraceno :
45g de harina de trigo sarraceno
35g de mantequilla semi-salada
30g de polvo de avellana tostada
30 g de queso parmesano rallado
10g de azúcar
pimienta molida
Puré de batata kabocha :
600 g de carne de kabocha cocida
800 g de boniato cocido
300 g de nata líquida
75 g de mantequilla semisalada
sal, pimienta, nuez moscada
Shiitake con ajo :
6 cucharadas de aceite de oliva
600 g de setas shiitake
4 dientes de ajo
cebollino
Fried Rattes du Touquet :
1 kg de rattes du Touquet
6 cucharadas de aceite de oliva
50 g de mantequilla semisalada
3 pechugas de pato
En primer lugar, preparar el crumble de trigo sarraceno. Mezclar todos los ingredientes a mano en un recipiente pequeño.
Debería tener una pasta homogénea.
Vierta la masa en trozos pequeños en una bandeja de horno forrada con papel de hornear.
Hornear a 170°C durante 17 minutos. Dejar de lado.
Preparar el puré.
Corta y vacía la kabocha, que puedes sustituir por calabaza o calabacín.
Cocinar al vapor con los boniatos pelados y troceados.
Cocer al vapor el conjunto de 15 a 25 minutos, de manera que se pueda introducir un cuchillo sin resistencia.
Retirar la pulpa de la calabaza y ponerla en un recipiente con el boniato.
Triturar con una máquina de hacer puré o con una batidora de mano. Añadir la mantequilla semi-salada y la nata.
Salpimentar y añadir un poco de nuez moscada. Mezclar bien. Dejar de lado.
Lavar las rattes du Touquet y las patatas pequeñas.
Verter el aceite y la mantequilla en una cazuela a fuego moderado.
Añade las patatas cortadas por la mitad.
Cierre la tapa y cocine por 25 minutos, revolviendo ocasionalmente.
Transcurrido este tiempo, se retira la tapa y se deja cocer hasta que tome color. ¡Todos se volverán crujientes!
En el caso de las setas shiitake, puedes sustituirlas por otras más tradicionales.
Pelarlas por partes y cortarlas en trozos.
Vierta el aceite y el ajo picado en una sartén.
Añadir las setas y cocinar hasta que estén bien hechas.
Añade un poco de cebollino.
Para las pechugas de pato, ponerlas en el congelador durante 3 horas para facilitar la siguiente operación.
Córtalas en rodajas muy finas.
Luego, con dos pinchos, vuelve a unirlos.
Cuando todo esté listo y cocido, cocine las pechugas de pato en una sartén bien caliente. La grasa se derretirá mejor con las rodajas precortadas. La grasa debe estar bien coloreada.
Deje que el otro lado se cocine hasta el punto deseado.
Sólo queda quitar los pinchos y servir una mitad por persona.
Servir todo junto, con el crumble de trigo sarraceno sobre el puré. Una delicia.
