Una nueva receta de macarrones en mi blog. En esta ocasión os doy mi receta de macarrones de praliné. Una apuesta segura para este clásico y pero delicioso sabor . Las cáscaras con crujientes avellanas tostadas revelan un interior suave y rico con un praliné casero. Se puede añadir un 50% de polvo de avellana a la mezcla de los macarrones, pero yo prefiero guardar esa opción para una futura receta de gianduja.
-95g de mantequilla -la punta de un cuchillo de vainilla en polvo
-Merengue italiano hecho con 60g de azúcar + 20g de blanco
Haga una receta de macarrones sencillos. La receta está aquí.
Aplastar unas cuantas avellanas con el fondo de una sartén.
Espolvorear la mitad de los macarrones con avellanas.
Hornee como de costumbre siguiendo la receta de su horno.
Preparación de la crema de mantequilla de praliné:
La mantequilla debe estar a temperatura ambiente.
Mezclar con una batidora eléctrica o con un procesador de alimentos con accesorio para batir.
Después de tres o cuatro minutos, añadir el praliné casero (¡receta aquí!) . Puedes poner la mitad de avellanas y la mitad de almendras en el praliné, o sólo una u otra.
Mezclar bien y añadir la vainilla en polvo.
Prepare un merengue italiano siguiendo el mismo método que para el merengue italiano de los macarrones, pero con 60 g de azúcar y 20 g de claras de huevo. Sin embargo, deje que se enfríe por completo antes de incorporar el merengue a la mantequilla/praliné, ¡de lo contrario la mantequilla se derretirá!
Mezclar, levantando la mezcla para que el merengue italiano no se deshaga, como para una mousse.
Adornar las cáscaras de los macarrones, y pegarlas de dos en dos con una de las cáscaras que tendrá avellanas.
Guárdelo en una caja hermética durante la noche antes de comerlo.
