Tenía muchas ganas de daros una receta de macarrones con relleno de flores. Intenté acercarme lo más posible a lo que hace Ladurée en este sentido, es decir, una crema de mantequilla aireada con merengue italiano. El resultado es sorprendente y totalmente delicioso. Ahora que llegan los días de sol, es el momento de probar estos macarrones de jazmín, que se pueden adaptar a la rosa o a cualquier otro sabor floral.
Receta de crema de mantequilla de jazmín para 35 macarrones (receta de macarrones AQUÍ).
Hacer un merengue italiano (ver explicación en la receta de los macarrones) AQUÍ) con las proporciones anteriores a 121°C y luego batirlo hasta que esté a temperatura ambiente. Luego, enfríelo hasta que lo utilice más adelante en la receta.
Verter la leche y 25g de azúcar (de los 45) en un cazo pequeño a fuego lento y llevar a ebullición.
Mezclar los 35g de yema con los 20g de azúcar. Batir todo lo posible.
Verter la leche caliente sobre la mezcla de yemas y azúcar. Volver a poner a fuego lento y cocer como un flan, es decir, sin hervir. Esto se puede comprobar cocinando a 85°C mientras se remueve.
Yo bato la nata continuamente mientras se cocina para que quede aireada y suave.
Verter en el bol con el batidor.
Batir a velocidad media hasta que la crema haya alcanzado la temperatura ambiente.
La crema adquiere entonces una increíble consistencia espumosa.
Añadir la mantequilla a temperatura ambiente, la gota de colorante azul y el aroma de jazmín. Aquí está el concentrado de aroma de jazmín que encontré en Déco Relief en París pero que puedes encontrar en internet AQUÍ.
Batir a alta velocidad. Al principio puede parecer extraño, pero no te preocupes. Pronto volverá a la normalidad y debería tener una crema suave.
Añadir el merengue italiano enfriado que se ha preparado anteriormente.
Mezclar suavemente, levantando, como para una mousse de chocolate.
Introduce en una bolsa con una boquilla de 10 mm y rellena las conchas antes de pegarlas de dos en dos.
