Se parecen a las galletas bretonas pero sólo con los ojos. Nada más olerlas, se nota que son ricas en almendras… Deliciosos macarrones que siguen siendo ligeramente crujientes por fuera y suaves por dentro. Hay tantos tipos de macarrones en Francia, que es un verdadero reto probarlos todos. Esta receta me la dio una amiga de mi madre (Brigitte) que quiso compartir con nosotros estos macarrones de Amiens. ¡Para nuestro gran placer!
Receta de macarrones de Amiens:
-320 almendras en polvo
-200g de azúcar en polvo
-35g de miel
-40g de mermelada de albaricoque
-20 g de yema de huevo
-45g de clara de huevo
-1 cucharadita de extracto de vainilla líquido
-1 cucharadita de extracto de almendra amarga
Mezclar el polvo de almendra y el azúcar. Si tienes polvo de almendra que no sea demasiado fino, ¡es aún mejor!
En un bol, mezclar el resto: miel, yema, clara, vainilla, extracto de almendra amarga, mermelada de albaricoque.
Verter en la mezcla en polvo y mezclar.
Debería tener un mazapán bastante firme.
Envolver la masa en film transparente para formar un rollo de 4 cm de diámetro. A continuación, ponga el pudín en una bandeja de horno en el congelador durante 1 hora. Esto hará que la masa esté más firme, y luego podrá cortarla en trozos.
Cuando la masa esté lo suficientemente firme como para cortarla sin que se aplaste, córtela en rodajas de 1 cm de grosor.
Cocer en el horno precalentado a 165°C durante 17 a 20 minutos. Los macarrones deben estar dorados por fuera y aún blandos por dentro.
Guárdelos en una caja hermética al abrigo del aire y la humedad.
