Esta es una receta sencilla pero sabrosa. Una leche de coco servida muy fría, ligeramente endulzada con bolas de tapioca y plátanos frescos, aromatizada con hojas de pandan. Un postre totalmente vegano que hice para una persona vegana. Había hecho postres tailandeses en mi primer libro, «Mis postres» (Fammarion 2014) y había puesto una receta de leche de coco fresca con castañas de agua de almidón de tapioca, y una leche de coco caliente con plátanos cocidos. Aquí es aún más sencillo. Sólo hay que enfriarlo en la nevera y servirlo helado con rodajas de plátano.
Receta para 4 personas:
1 litro de leche de coco
100g de azúcar de palma o azúcar de tosca
50 g de bolas de tapioca (yo he utilizado bolas ya aromatizadas con hoja de pandan)
2 plátanos
Aquí están las bolas de tapioca que compré en Paris Store. Estas ya están aromatizadas con el aroma del pandan. Puedes hacer tú mismo este aromatizante natural (ver receta AQUÍ) o comprar uno artificial (ver AQUÍ).
Poner el azúcar de palma (o el azúcar moreno) en una sartén.
Verter la leche de coco y calentar hasta que el azúcar se haya derretido.
Añadir las bolas de tapioca. Si son blancas, añadir el aroma de pandan.
Si están coloreados y perfumados, viértelos directamente.
Remover sin parar a fuego lento durante unos diez minutos.
Dejar reposar completamente y luego enfriar durante la noche si es posible o durante al menos 4 horas.
Corta los plátanos en trozos y ponlos en un bol por persona.
Vierta la leche de coco fresca y sirva inmediatamente.
