El otoño está llegando lentamente. Esta es mi estación favorita: el tiempo se vuelve más fresco y es la excusa perfecta para cocinar deliciosos platos, quedarse en casa y convertirla en un lugar acogedor que huela a galletas cociéndose suavemente en el horno. También es el regreso de la calabaza. Como sabes, en estos momentos hay un juego para ganar una KitchenAid Heritage Blue Vintage. Tengo la suerte de ser una de las embajadoras de la marca en Francia para mi taller y a veces me envían utensilios para mis clases. Esta es la última adición, el helicóptero de metal. Me acaban de pedir que haga una receta con esta picadora, que se imprimirá y se entregará al comprar un robot de cocina. Por supuesto, ¡también comparto la receta con vosotros aquí!
Para 4 personas :
1 calabaza kabocha o calabaza pequeña
1 cucharada de aceite de oliva
1 cabeza de ajos
75g de quinoa
1 cebolla blanca
2 cm de jengibre fresco rallado
2 cucharadas de aceite de nuez
300 g de pechuga de pollo
50g de nueces
150 g de castañas cocidas
150 g de edamame o habas
1 cucharada de aceite de sésamo tostado
unas ramitas de cilantro
unos cuantos tallos de cebollino
250 g de mascarpone
sal pimienta
Primero, cocine la calabaza kabocha. Puede sustituirla por cualquier calabaza firme y dulce.
Corta la parte superior con un buen cuchillo y luego sácala con una cuchara. Untar con aceite de oliva la carne por dentro y la piel.
Colóquelo en una bandeja de horno, añada la cabeza de ajos entera y hornéelo durante 1,5 horas a 170°C. Retirar la cabeza de ajo después de una hora de cocción y reservarla. Compruebe el color de la calabaza después de una hora y media y ajuste el tiempo de cocción a su propio horno.
Mientras tanto, prepare el relleno.
Cocer la quinoa durante 15 minutos en agua hirviendo con sal y escurrirla bien.
Pelar y picar finamente la cebolla. Vierta el aceite de nuez (que puede sustituir por aceite de oliva) en una sartén grande. Caliéntelo a fuego moderado y añada la cebolla y el jengibre fresco rallado. Cocer durante 5 minutos.
Cortar el pollo en tiras gruesas y pasarlas por la picadora de carne Kitchenaid.
Coge el pollo y ponlo en la sartén. Mezclar bien. Pasar las nueces por la picadora y poner el resultado en la sartén.
Cocer al vapor el edamame o las judías durante 10 minutos.
Cuando el pollo esté bien cocido, añade las castañas picadas y el edamame (o frijoles) cocidos. Pon sal y pimienta a tu gusto.
Ralla un poco de jengibre fresco.
Añadir el edamame cocido.
Quinoa.
Mezclar bien.
Picar el cilantro finamente y añadirlo al relleno.
Pelar los ajos asados y poner la pulpa en una sartén. Triturar con un tenedor y añadir el mascarpone. Calentar sólo para licuar el mascarpone.
Pon sal y pimienta a tu gusto. Dejar de lado.
Cuando la calabaza esté cocida, rellenarla con el relleno caliente, espolvorear con semillas de sésamo tostadas y cebollino finamente picado. Servirlo inmediatamente con la crema de mascarpone y ajo asado. Si la piel de la calabaza es tierna y orgánica, ¡no dudes en comerla!
