Siguiendo mi receta de ñoquis de calabaza, ¡aquí tienes una receta muy otoñal para cocinarlos! Sugiero un lecho de puré de calabaza con nueces, ñoquis fritos, mantequilla de salvia crujiente, ¡espolvoreado con nueces y semillas de calabaza tostadas! Una verdadera delicia, tanto visual como gustativa. Por supuesto, este plato puede servirse con o sin carne, ya que es casi autosuficiente.
Para 4 personas:
450 g de ñoquis de calabaza(receta AQUÍ) o ñoquis clásicos(receta AQUÍ)
30g de semillas de calabaza
50g de nueces
50 g de mantequilla semisalada
unas quince hojas de salvia
Puré de calabaza
3 cucharadas de aceite de oliva
3 dientes de ajo
300 g de calabaza
70 g de mascarpone
40g de nueces
Nuez moscada
Un poco de agua
sal pimienta
Primero, prepara tus ñoquis de calabaza(receta AQUÍ). Guarda un poco de carne de calabaza. Calentar el aceite de oliva con los dientes de ajo pelados y picados y cocinar durante 5 minutos. Añadir los 300 g de carne y aplastar con un tenedor.
Añadir sal y pimienta al gusto.
Verter el mascarpone y las nueces picadas.
Mientras tanto, cocine los ñoquis en agua hirviendo con sal. Añadir un poco de nuez moscada y un poco de agua si es necesario para conseguir una buena textura.
Subirán a la superficie. Cocine durante otros 5 minutos a partir de este punto.
Tostar las semillas de calabaza en una sartén. Estallarán y se volverán suculentos.
Para la mantequilla de salvia: calentar la mantequilla semi-salada a fuego moderado y añadir las hojas de salvia.
Dorar la mezcla sin que se queme la mantequilla. La salvia acabará endureciéndose y volviéndose crujiente.
Calentar un poco de aceite de oliva en una sartén antiadherente y saltear los ñoquis escurridos.
Dóralos ligeramente.
Montar los platos con un lecho de puré de patatas, los ñoquis, rociar con mantequilla de salvia y hojas crujientes. Espolvorear con un poco más de nueces picadas y semillas de calabaza tostadas. Salpimentar y servir inmediatamente.
Préparez tout d’abord vos gnocchis au potimarron (recette ICI). Gardez de la chair de potimarron. Faites chauffer l’huile d’olive avec les gousses d’ail épluchées et hachées et faites cuire 5 minutes. Ajoutez les 300g de chair et écrasez à la fourchette.
Salez et poivrez à votre goût.
Versez le mascarpone et les noix hachées en morceaux. Mettez un peu de noix de muscade et ajoutez un peu d'eau au besoin pour obtenir une belle texture.
Pendant ce temps faites cuire les gnocchis l’eau bouillante salée.
Ils vont remonter à la surface Faites cuire encore 5 minutes à partir de ce moment là.
Faites griller les graines de courges à la poêle. Elles vont éclater et devenir succulentes.
Pour le beurre de sauge : faites chauffer le beurre demi-sel sur feu modéré puis ajoutez les feuilles de sauge.
Faites colorer le tout sans brûler le beurre. La sauge va finir par devenir dure et croustillante !
Dans une poêle anti-adhérente, faites chauffer un peu d’huile d’olive et faites sauter les gnocchis égouttés.
Faites-les légèrement colorer.
Montez les assiettes en mettant un lit de purée, les gnocchis, arrosez de beurre de sauge et de feuilles croustillantes. Parsemez d’un peu de noix hachées supplémentaires et de graines de courges grillées. Salez et poivrez et servez sans attendre !
