Tengo una nueva receta de galletas para ti. No es el primero y, desde luego, no es el último. ¿Cómo puede resistirse a estos pastelitos calientes, suaves, fundentes y crujientes? La principal ventaja de este tipo de recetas es que son muy fáciles de hacer y el resultado es siempre tan bueno como se espera. Ya había propuesto una receta de galletas blandas con chips de mantequilla de cacahuete (receta AQUÍ). Al final, el matiz es enorme y el resultado muy diferente. Aquí hay mantequilla de cacahuete en la masa, lo que le da una textura muy especial. Los cacahuetes tostados y las pepitas de chocolate están ahí para recordarnos lo decadente que es todo… ¡Pero delicioso!
Receta para unas 30 galletas de mantequilla de cacahuete:
-100g de harina -50g de azúcar -115g de azúcar rubio de repostería -75g de mantequilla -220g de mantequilla de cacahuete -1 huevo grande de 60g -90g de cacahuetes salados (para el aperitivo) -90g de chispas de chocolate (con leche o negro) -1 cucharadita de vainilla líquida -3/4 cucharadita de bicarbonato de sodio -1/4 cucharadita de sal
Derretir la mantequilla en el microondas o al baño María. Añadir los azúcares: sémola y vergeoise.
Mezclar bien y añadir la vainilla líquida.
También lo es el huevo.
Mezclar bien y añadir la mantequilla de cacahuete.
En un recipiente aparte, combine la harina, el bicarbonato y la sal. Añadir esta mezcla seca a la mezcla de huevos, mantequilla, azúcar y mantequilla de cacahuete.
Mezclar bien y añadir los cacahuetes tostados y salados.
Luego los trozos de chocolate. Para esta receta utilizo pistolas de chocolate Barry.
Mezclar todo y hacer una bola.
En este punto, ¡es imprescindible probar la masa cruda!
Formar bolas de 35 g. Colóquelos en una bandeja de horno forrada con papel de hornear.
Aplastar con la palma de la mano.
Hornear a 180°C durante 8 a 10 minutos. El borde debe estar un poco dorado y la galleta debe estar hinchada.
Para evitar que se rompan las galletas, que son frágiles en esta etapa (debido a la mantequilla de cacahuete), deslizo el papel de las galletas fuera de la bandeja de hornear. Hornea inmediatamente una nueva tanda.
Una vez que las galletas sean manejables, colócalas en una rejilla para hornear.
Una vez que se haya enfriado, ¡se pueden engullir sin freno!
