El otro día, una amiga me dio a probar estas galletas de mantequilla y me encantaron inmediatamente. Ella accedió amablemente a compartir su receta conmigo, a la que sólo añadí almendras fileteadas. El resultado es perfecto y todavía sueño con morder estas crujientes galletas de mantequilla. No son demasiado dulces y dejan mucho espacio para el reconfortante sabor del chocolate. Con sus grandes trozos, el cacao en polvo sin azúcar y una pizca de sal, ¡seguro que te engancha!
Receta de shortbread de chocolate y almendras (para 24 shortbread):
-85g de mantequilla semi-salada
-75g de mantequilla blanda
-55g de azúcar moreno vergeoise
-95g de azúcar
-175g de harina
-50 g de cacao en polvo sin azúcar
-1/4 de cucharadita de bicarbonato de sodio
-150g de chocolate
-60g de almendras fileteadas
Mezclar las mantequillas y los azúcares hasta que estén cremosos.
En un bol aparte, mezclar la harina, el cacao sin azúcar y el bicarbonato.
Tamizar el cacao en polvo.
Verter este polvo sobre la crema obtenida anteriormente.
Vuelve a mezclar (con la hoja de tu batidora si tienes una) hasta que tengas una masa que se agrupe. ¡No insistas más!
Puedes añadir trocitos de chocolate o trozos. Esto es lo que hice con una barra de chocolate no muy fuerte (55%).
Echar los trozos y las almendras laminadas en el bol.
Vuelve a mezclar hasta que tengas una pasta, pero no insistas.
Enrollar la masa en forma de salchicha de 5 cm de diámetro.
Envuélvelo en film transparente. Enfríelo durante al menos 1 hora y 30 minutos.
Cortar en rodajas (1cm). Lo más difícil es cortar bien sin romper la masa. Si la rebanada duele y los trozos rompen el shortbread, vuelva a unirlo. Cuando hornees, ¡el problema estará resuelto!
Colocar 12 galletas de mantequilla en cada bandeja de horno forrada con papel de hornear.
Hornear durante 14 minutos a 180°C.
Haz lo mismo con la segunda tanda y deja que se enfríen en una rejilla antes de guardarlos en una caja hermética.
