Estas galletas masticables deben su maravillosa textura a un ingrediente poco habitual en una receta de galletas. ¡Lo publico porque estos cupcakes son simplemente divinos! La única dificultad es encontrar estos nuggets de mantequilla de cacahuete, pero puedes encontrar todas las tiendas en la sección «mis direcciones«… ¡Me costó un poco hacer las fotos porque con cada tanda, mis sobrinos se abalanzaban sobre las galletas calientes!
Receta para unas 30 «galletas blandas de mantequilla de cacahuete»:
-200g de vergeoise rubia -70g de azúcar -170g de mantequilla blanda -1 huevo -230g de harina -30g de harina de maíz -1 cucharadita de bicarbonato de sodio -1/2 cucharadita de levadura en polvo -180g de chips de mantequilla de cacahuete
Precalentar el horno a 180°C. Mezclar la mantequilla blanda, los azúcares y el huevo.
Mezclar la harina, la levadura en polvo, el bicarbonato y la harina de maíz en un bol y añadir a la mezcla de azúcar/mantequilla/huevo.
Añade los chips de mantequilla de cacahuete.
Mezclar bien.
Hacer bolas del tamaño de una nuez grande y colocar 6 de ellas en una bandeja de horno de 30X40 forrada con papel de hornear.
Introducir en el horno y hornear durante 9 minutos en cada placa.
Después de 5 minutos, despegar el papel y dejar enfriar sobre una rejilla de horno.
