Desde hace algún tiempo, las patatas fritas de trigo sarraceno están disponibles en el mercado como aperitivo. Quería volver a hacerlos en casa y daros la receta. El resultado es sorprendente. El sabor del trigo sarraceno es explosivo, especialmente cuando se combina con el sabor de la pimienta. Para nuestros amigos intolerantes al gluten, ¡buenas noticias! No hay ni un gramo, porque no hay nada más que trigo sarraceno. Y es totalmente vegano, ¡porque no hay huevos ni mantequilla! Se lo di a unos amigos como aperitivo y a todos les encantó. ¡Estoy pensando en volver a hacerlo muy a menudo!
Receta para 600 g de chips de trigo sarraceno:
250 g de harina de trigo sarraceno integral
150 g de aceite de colza o de oliva
550g de agua
4g de pimienta negra molida
6g de sal
Aquí están todos los ingredientes para esta increíble y deliciosa receta de aperitivo.
Vierta la harina de trigo sarraceno, el aceite, la sal y la pimienta en un bol. Hay mucho aceite, pero esto es lo que hará las crujientes y deliciosas patatas fritas.
Verter el agua y batir.
Incluso puedes utilizar una batidora de mano para hacer más burbujas. Esto dispersará el aceite en forma de microgotas.
Para mayor comodidad, he cocinado estas «patatas fritas» en la bilig (crepera) de la marca Krampouz. Pero también se puede hacer en una sartén. Sólo tienes que asegurarte de extender bien la masa y de hacerlo con una sartén antiadherente. Puedes hacer fichas finas o más gruesas. Depende de ti. Para los que tienen un bilig, lo pongo a 220°C. Vierta un buen cucharón de masa, como para una tortita normal, y luego extienda con el rozel para el bilig, o agitando la sartén.
Cuando la parte inferior esté cocida, dar la vuelta a la tortita y cortarla en trozos inmediatamente. No espere a cortar, porque entonces el panqueque se volverá quebradizo. Las patatas fritas empezarán a chisporrotear gracias al aceite.
Sécalos bien por el otro lado. Así, se colorearán más rápidamente. Tenga cuidado de no quemarlas, especialmente cuando las cocine en una sartén.
Comprueba la consistencia. Los más finos se ponen crujientes muy rápidamente, pero los más gruesos tardan más. Para ello, los meto en el horno a 50°C en calor rotativo, con la puerta entreabierta, para terminar de secarlos. De este modo, todas las patatas fritas, finas o gruesas, quedan perfectamente crujientes.
