Me ha sorprendido el número de solicitudes de la receta de Far Breton. ¡Así que estoy aprovechando mis vacaciones en la casa de la familia y su aire de mar para hacerlo! Así que aquí está, pero estoy dando la receta básica aquí. La receta original no incluye ni ciruelas ni pasas. Pero, por supuesto, se pueden añadir a esta receta. También puedes hacerla tan gruesa como quieras y, sobre todo, ¡flamearla con Grand Marnier al salir del horno! Pero hay que tener en cuenta que un far es raramente grueso y está entre uno y dos centímetros.
Receta básica de «far breton»:
-750ml de leche entera fresca -240g de harina -190g de azúcar -4 huevos -50g de mantequilla salada -opcional: ¡ciruelas o uvas marinadas en ron!
Precalentar el horno a 160°C. Poner el azúcar y los huevos enteros en un bol. Bátalos juntos.
Añadir la mitad de la harina y mezclar bien para evitar los grumos.
Añadir un tercio de la leche y seguir mezclando bien.
Añadir el resto de la harina…
Después de mezclar, añadir el resto de la leche. De este modo, se evitan por completo los grumos. El resultado es una especie de masa para panqueques.
Poner aproximadamente un tercio de los 50 g de mantequilla salada en una cazuela de barro.
Y se extiende con una toalla de papel o a mano.
Verter la masa en el plato. La altura del relleno horneado es la misma que la de la masa vertida. Se necesitan menos de dos centímetros. En este momento se pueden añadir al plato ciruelas pasas o uvas marinadas en ron.
Añadir el resto de la mantequilla salada, cortada en tiras finas, a la superficie de la masa…
Poner en el horno durante una hora aproximadamente.
Hay que vigilar la harina para evitar que se queme. Debe estar cuajado, por lo que debe estar bien cocido al salir del horno.
En este momento está bastante hinchado. ¡Un far puede hincharse de forma impresionante dependiendo de su grosor!
¡Luego se puede ver que adquiere su grosor final al enfriarse!
