Esta es la Esfera de Cobre, que está hecha de la misma manera que la Esfera de Oro, pero con un interior oculto completamente diferente. Incluso si no quieres probar esta receta por las esferas de chocolate (¡que son muy sencillas, pero requieren equipo!), ¡puedes hacer el mismo montaje en círculo o en taza sin el chocolate atemperado! Le sugiero que pruebe esta receta, aunque sólo sea por el mascarpone y la crema batida de amaretto. ¡Una pura maravilla!
Prepara las medias esferas de chocolate templado como se indica en mi receta (haz clic en «chocolate templado» en los ingredientes).
Prepare también los amaretti.
Empieza poniendo los amaretti de nuevo en el horno a 180°C durante 10 minutos para que se vuelvan a cocer y queden crujientes.
Con una brocha de maquillaje (reservada para este fin), aplicar una capa de cobre brillante sobre las medias esferas no moldeadas.
Poner la nata, el mascarpone, el amaretto y el azúcar glas en un bol en la nevera con las varillas. Dejar enfriar en la nevera durante al menos 1 hora.
Sácalo todo y luego bátelo hasta obtener una crema batida espesa.
Para la salsa de chocolate, llevar a ebullición la leche y la nata y verter sobre el chocolate troceado, mezclar bien y dejar a fuego muy lento hasta su utilización.
Prepare un café fuerte y vierta amaretto (al gusto). Mojar los amaretti (los blandos, ¡no los que se han vuelto a hornear!).
Para montar las esferas.
Poner la crema batida de amaretto en una manga pastelera.
Poner un poco de crema en un plato y colocar media esfera de cobre boca abajo.
Rellenar con dos o tres amaretti empapados en café, rotos en trozos en el fondo de la media esfera.
Llenar hasta el borde con crema. Poner una bola de helado de café encima y espolvorear con pequeños trozos de amaretti seco (recocinado).
Cierra con la esfera del segundo tiempo.
Espolvorear amaretti seco alrededor de la base y colocar un amaretti blando encima. De todos modos, ¡puedes hacer lo que quieras!
Prepara las otras 3 esferas de la misma manera y vierte la salsa de chocolate caliente sobre las esferas delante de los invitados. Las esferas se romperán y se fundirán para revelar su interior secreto. ¡Efecto espectacular garantizado!
