Cuando no tengo tiempo para cocinar antes de una clase de cocina (¡es el colmo!), a veces me compro una ensaladita, cuya receta os doy aquí. ¡La combinación del hummus de remolacha y arándanos con la ensalada de quinoa es absolutamente perfecta! El resultado es algo dulce y sabroso que disfruto siempre. Pensé que en lugar de comprarlo, lo haría con los mismos ingredientes. Se vende con el humus debajo. ¡Así que hay que comer un poco de todo al mismo tiempo y eso es lo que hace que este plato sea totalmente adictivo!
receta para 6 a 8 personas:
hummus de remolacha y arándanos:
550 g de garbanzos escurridos
150 g de remolacha cocida
55g de agua
70g de tahini
2 dientes de ajo pequeños o uno grande
55 g de arándanos secos
30 g de aceite de oliva
10g de vinagre balsámico
sal pimienta
ensalada de quinoa:
500g de quinoa (yo tomé una mezcla de varias quinoas)
110 g de semillas de calabaza
150 g de arándanos secos
170 g de higos secos
1 cebolla roja
20 g de semillas de chía
5 cucharadas de aceite de colza
1+1/2 cucharada de vinagre balsámico
sal pimienta
Comienza lavando la quinoa y cociéndola durante 12 minutos en una olla grande de agua hirviendo con sal.
Mientras tanto, prepara el hummus poniendo todos los ingredientes en una batidora. Pon sal y pimienta a tu gusto.
Mezcla durante 2 o 3 minutos y el hummus está listo.
Cuando la quinoa esté lista, refréscala en agua fría y escúrrela bien. Dejarlo en un colador fino durante 5 minutos para que escurra el agua. A continuación, colóquelo en un bol grande y vierta los arándanos, las semillas de calabaza y las semillas de chía.
Cortar los higos secos en trozos, después de quitarles los tallos pequeños.
Pelar y picar finamente la cebolla roja.
Verter el aceite de colza y el vinagre balsámico. Aquí utilicé un aceite de colza, luego un aceite amarillo con un sabor muy fuerte.
Pon sal y pimienta a tu gusto. Sirve una buena porción de hummus de remolacha y luego pon la ensalada a un lado. También puedes hacer una cama de humus y colocar encima una porción de ensalada.
Simplemente añadí unos brotes de brócoli baby y un poco de cebollino picado. Una delicia.
