Pero la temporada no se presta a ello. Algunos días parece otoño… Así que me apetecía reconfortar las cosas. Entre esta tarta de avellanas definitiva y la siguiente receta que voy a publicar, ¡estamos en plena decadencia calórica! Quería un rico pastel con la textura perfecta que tenía en mente. Tuve que hacer varios intentos para llegar a estas proporciones que corresponden idealmente al pastel que me gusta. Me anticipo a la pregunta que a veces me hacen cuando publico una receta de tarta: no, no está nada seca. Al contrario. Es un poco como un financiero, pero con diferentes dosis. Y con el suave glaseado de chocolate y las avellanas picadas, me enganché… Tendrás que prepararlo el día anterior, porque como todas mis tartas de un tiempo a esta parte en mi blog de cocina, lo dejé reposar toda la noche en la nevera.
Receta para un molde de 18 cm de largo:
60 g de avellanas picadas
150 g de mantequilla blanda
100 g de avellana en polvo
55g de harina
135 g de azúcar glas
125 g de clara de huevo
1/4 de cucharadita de vainilla en polvo o el interior de una vaina de vainilla
2,5 g de levadura en polvo
Glaseado de chocolate :
150 g de chocolate negro
30 g de aceite de colza
unas cuantas avellanas picadas
En primer lugar, tueste las avellanas picadas en el horno a 180°C durante unos 12 minutos. Hay que poner los 60g para la masa y 20g más para el glaseado (¡más o menos!).
Deben tener color sin quemarse. A continuación, baje la temperatura del horno a 155°C para el siguiente paso (¡siempre con el horno de ventilador!).
Derretir la mantequilla en una cacerola y luego cocinarla para que quede como una nuez. ¡Se dorará y olerá delicioso!
Como esto lleva unos minutos, aprovecha para poner en un bol el polvo de avellana, la harina y el azúcar glas.
Mezclar y añadir la clara de huevo pesada. Para ello, rompa 4 huevos grandes y ponga las claras en un bol. Romper la textura helada con un tenedor y verter la cantidad deseada (aquí 125g).
Mezclar bien y luego verter la mantequilla de avellana a través de un colador de té de metal.
Mezclar y no olvidar la vainilla. Aquí he utilizado vainilla en polvo. En realidad, se trata de vainilla agotada y molida en polvo, no de vainillina. Yo siempre tengo algunas a mano, pero por supuesto puedes utilizar el interior de una vaina de vainilla.
Mezclar bien y añadir por último la levadura en polvo. Por supuesto, tendrás que volver a mezclar, como habrás adivinado. Y lo que es más. Para dispersar la levadura de manera uniforme. No lo pongo antes, porque la mantequilla caliente lo activaría.
Verter los 60g de avellanas en la masa. Guardar el resto para el glaseado.
Mezclar bien. La masa parecerá líquida, pero no te preocupes, ¡las nueces no se caerán al fondo durante la cocción!
Forrar un molde de 18 cm con papel de horno y verter la masa en él. Si su molde es más pequeño o más grande, tendrá que ajustar las proporciones con una regla de tres…
Hornee durante 50 minutos a 155°C y luego 20 minutos a 150°C con vapor extra si su horno lo permite. Si no es así, hornear el pastel durante 1h15 a 155°C.
Dejarlo enfriar en el molde y luego pasar la noche en la nevera. Los pasteles sólo quedan perfectos después de una noche en la nevera. Debe protegerse de los olores con film transparente.
Al día siguiente, saque el pastel de los moldes y colóquelo en una rejilla para hornear, colocada a su vez sobre un papel.
Derretir el chocolate y verter el aceite de colza. Mezclar bien. El aceite dará un glaseado perfecto sin añadir sabor.
Espero hasta que el chocolate haya bajado a 29°C antes de cubrir el pastel. Hay que removerlo regularmente hasta que alcance esta temperatura. Será más suave y cubrirá mejor el pastel, mientras que si está más caliente, será demasiado líquido…
A continuación, viértalo sobre el pastel para cubrirlo por completo.
Añadir unas cuantas avellanas picadas y enfriar durante 20 minutos para que se cuaje. Por fin puedes cortarlo y comerlo… Estará aún mejor fresco.
