Llevo haciendo este postre desde hace casi 15 años, pero sólo añadí las frambuesas hace dos años. Todo el mundo conoce ya este pequeño entremés crujiente, compuesto por una capa de praliné (¡me gusta generoso!) y una mousse-ganache de chocolate. Pero esta vez encontrará fabulosas frambuesas frescas, que refrescan el conjunto y van perfectamente con el chocolate. ¡Un pastel muy sencillo de hacer, sin necesidad de harina ni de horno…!
Receta para 8 patatas fritas de chocolate y frambuesa:
Praliné crujiente: 400 g de pasta de praliné -160g de chocolate con leche -60g de mantequilla blanda -100g de gavotas trituradas
-500ml de crema completa -15g de azúcar glas -300g de chocolate negro (¡siempre uso el fabuloso Manjari de Valrhona!)
-250 g de frambuesas frescas -polvo de cacao
Comience por preparar el praliné crujiente. Poner la mantequilla y el chocolate con leche en un bol y fundirlos en el microondas o al baño María.
Añadir la pasta de praliné y mezclar bien.
Añadir las gavotas trituradas.
Colocar dos cucharadas del praliné crujiente en círculos de espuma de 8 cm en una bandeja de horno forrada con papel de hornear
Poner el plato en el frigorífico para que se cuaje el praliné.
Poner la nata entera en un bol con los batidores de la batidora. Enfríelo en un lugar fresco.
Derretir el chocolate en el microondas o al baño María. Dejar enfriar.
Montar la nata para montar con el azúcar glas (15g) hasta que esté dura.
Añadir el chocolate derretido y seguir batiendo para combinar.
Verter una cucharada de mousse de ganache de chocolate sobre la base de praliné. A continuación, colocar 7 u 8 frambuesas sobre la mousse de ganache.
Cerrar el círculo con la mousse de ganache, asegurándose de forrar el interior del círculo.
Raspar el borde superior con un cuchillo grande.
El resultado son círculos perfectos.
Dejar cuajar en un lugar fresco durante al menos tres horas. Apagar pasando un secador de pelo alrededor de los círculos.
A continuación, tira suavemente del círculo hacia arriba, perfectamente vertical.
Volver a meter los pasteles en la nevera durante 15 o 20 minutos.
Espolvorear con cacao (puro, sin azúcar).
¡Decora como quieras! Sólo guardé algunas de las almendras caramelizadas que se utilizan para la pasta de praliné… Y algunas frambuesas frescas.
