Una breve estancia en Pekín, donde volví a hacer un auténtico curso de cocina. Uno de los platos de este curso fue el cerdo salteado con brotes de ajo (¡sí «brotes» y no «dientes»!). Fácil de hacer. Lo más difícil es encontrar los brotes de ajo, ¡que no es un problema si vas a una tienda de comestibles asiática! Los brotes de ajo son más bien judías verdes con un ligero sabor a ajo. Esta verdura también puede sustituirse por otra verdura verde.
Receta de «Salteado de cerdo con brotes de ajo» para 4 personas:
-500g de lomo de cerdo en trozos
-300g de brotes de ajo cortados en trozos de 5cm
-4 cucharaditas de jengibre, finamente picado en juliana
Escabeche de cerdo
4 cucharaditas de salsa de soja transparente
4 cucharaditas de vino chino (vino de cocina)
-8 cucharaditas de harina de maíz
Salsa:
-1/2 cucharadita de sal
-4 cucharaditas de salsa solja clara
-2 cucharaditas de salsa de soja oscura
-2 cucharaditas de azúcar
-2 cucharaditas de harina de maíz
-6 cucharadas de agua
Para los que se preguntan cómo son los «brotes» de ajo, aquí hay una foto:
Comience por preparar la marinada mezclando bien todos los ingredientes, es decir, la salsa de soja clara, el vino chino y la harina de maíz.
Cortar la carne de cerdo en trozos y verter la marinada por encima. Dejar marinar durante al menos 15 minutos.
Prepare la salsa mezclando bien todos los ingredientes en un bol pequeño. Reservar para la siguiente etapa.
Lavar los brotes de ajo, cortar la flor de la parte superior. Cortar los brotes en trozos de unos 5 cm.
Calentar el wok a fuego medio con dos cucharadas de aceite. Añadir los brotes de ajo y dos cucharadas de agua (esto es para cocer los brotes). Fríe durante 1 minuto y retira los brotes del wok y resérvalos.
Vuelva a poner el wok vacío a fuego alto, añada 3 cucharadas de aceite y luego añada la carne de cerdo con la marinada.
Freír, separando los trozos de cerdo para que tomen color, y añadir el jengibre en juliana.
Se fríe durante 1 minuto y se añaden los brotes de ajo. A continuación, se añade la salsa y se fríe hasta que la salsa espese. Servir inmediatamente.
