Por una vez, voy a romper un poco la tradición con esta brandada. Esta deliciosa especialidad de Nîmes es muy adecuada para las variaciones regionales… No especifiqué la brandada de bacalao… Porque este lo hice con pescado fresco capturado por mi tío Raymond en Bretaña (el famoso pescado de Portsall). Le pedí a mi madre que me diera su receta que contiene este lugar. Pero puedes mantener la receta original utilizando el bacalao tradicional. A pesar de todo, ¡esta brandada es una delicia para todos! Con esta receta, tendrá una opción de pescado…
Receta de brandada para 6 personas:
-850g de bacalao o abadejo
-650g de patatas
-4 dientes de ajo
-150 ml de aceite de oliva
-150ml de nata líquida
-sal pimienta
-Timo, laurel, perejil
Si se utiliza bacalao seco, debe desalarse en agua fría (con varios cambios de agua) durante al menos 12 horas.
Pesar el bacalao una vez desalado, ya que recupera peso con el agua.
Poner el pescado crudo (abadejo o bacalao desalado) en agua fría con el tomillo y el laurel.
Poner a fuego lento y llevar a ebullición. Detener la cocción en cuanto el agua hierva.
Escurrir el pescado.
Aplastar el pescado con un tenedor.
Para obtener migas de pescado.
Al mismo tiempo que se cocinan, se cuecen al vapor las patatas peladas y cortadas.
Una vez cocidas, triturarlas con una prensa de puré.
Precalentar el horno a 210°C.
En una sartén grande (la que se utiliza para cocinar el pescado) se ponen los 150 ml de aceite (¡parece mucho pero es así!). Añadir los dientes de ajo machacados.
Cocine durante 2 minutos hasta que pueda oler el ajo. Añade el pescado desmenuzado.
Añadir el puré de patatas.
Mezclar con un batidor de mano para que no se distinga la patata del pescado.
Añadir la crema entera.
Batir bien, añadir sal y pimienta.
El consejo de Bernard: Por supuesto, también se puede añadir perejil fresco finamente picado.
Poner la brandada en una cazuela. Rascar la superficie con un tenedor. Rociar con aceite de oliva los surcos resultantes.
Hornear a 210°C durante 20 minutos para dorar la superficie (vigilar).
Servir inmediatamente y disfrutar con una ensalada.
