Los jugosos bollos de cerdo son una de las muchas especialidades de Shanghai. Es un bollo pequeño, sin azúcar, crujiente por debajo y con un relleno muy aromático y jugoso.
¿De dónde viene el jugo de carne? Y de gelatina preparada con antelación y por tanto enfriada (¡fijada!) y luego cortada en trozos pequeños. Una vez incorporado al relleno y horneado en el brioche, ¡se vuelve a derretir para nuestro deleite! La gelatina que se prepara en China es realmente muy larga de preparar y, francamente, ¡no es muy glamurosa! No es ni más ni menos que piel de cerdo cocida en agua con algunas hierbas. Así que me parece mucho más sencillo y sabroso comprar gelatina en bolsa en nuestros supermercados. Para una bolsa, puedes poner a hervir en el agua media cebolla china, una pequeña rodaja de jengibre y una loncha de lomo de cerdo. Dejar todo esto en maceración el mayor tiempo posible antes de que la gelatina cuaje. A continuación, guarde la gelatina en un lugar fresco y córtela en trozos. ¡Estamos listos para empezar nuestra receta!
Para el relleno:
-30g de agua
-300 g de lomo de cerdo picado
-5g de sal
-6g de azúcar
-3g de pimienta
una cucharada de vino chino
dos cucharadas de salsa de soja negra
-15g de cebolla china en trozos pequeños
-15g de jengibre picado finamente
dos cucharadas de aceite de sésamo tostado
-180g de gelatina cuajada y con trozos (¡véase la parte superior de la página!)
Para la masa:
-450g de harina
-6g de levadura en polvo
6g de levadura de panadería seca
-12g de azúcar
-agua caliente
Comienza poniendo los 30g de agua con la carne hasta que se haya absorbido completamente . A continuación, prepara el relleno mezclando bien todos los ingredientes. Poner en un lugar fresco mientras se prepara la masa.
En una superficie de trabajo, ponga la harina, haga un pozo y ponga el azúcar, la levadura y el agua tibia, luego mezcle y comience a amasar la masa doblándola y aplastándola con la palma de la mano, vuelva a doblar y así sucesivamente.
Después de 5 minutos, utilice un rodillo para seguir trabajando la masa, extendiéndola a lo largo. Dobla esta tira en tercios, gírala 90° y extiéndela de nuevo. Continuar este proceso durante otros 5 minutos.
Una vez hecho esto, enrolle la masa sobre sí misma y déjela reposar durante 15 minutos.
Vuelve a extender la masa en 3 hilos uniformes y corta cada hilo en 12 trozos. Coloque estos trozos de masa en posición horizontal y luego aplástelos uno a uno con la palma de la mano. Si es necesario, utilice un poco más de harina.
Extienda cada una de las piezas previamente aplanadas en un disco de 10 cm de diámetro. Extienda la masa con el rodillo, pasándola por la mitad inferior de los discos, luego gire 45° para extender otra parte, y así sucesivamente para extender cada disco de manera uniforme.
Rellenar los discos de hojaldre con una generosa cucharada de relleno. Séllelos y colóquelos boca abajo sobre una superficie enharinada.
Dejar que se hinche durante otros 15 minutos.
Calienta un poco de aceite (lo justo para freír un lado) en una sartén (¡el teflón ayuda mucho!) con tapa. Cuando el aceite esté caliente, colocar los bricoches en el aceite. Cierra el círculo. Cuando los bollos estén dorados por debajo, añade agua a la sartén, el equivalente a un vaso pequeño pero bien lleno. Dejar cocer con la tapa puesta hasta que se haya evaporado todo el agua.
Poner unas semillas de sésamo tostadas y un poco de cebolla china picada encima de los bollos. Servir inmediatamente. Se puede servir una salsa de acompañamiento, hecha con mitad de salsa de soja, mitad de vinagre balsámico y un poco de tabasco y aceite de sésamo.
